Been off all week. Just went to Kroger we always go to. Was shocked at the bare shelves. These are just a couple isles. There were a number like this. Noticeably canned goods, dry pasta etc. Canned soup almost nothing. What they did have was moved to the front of the shelves and not much behind it. Bottled water almost out again.

Store shelled nuts in an airtight container in the freezer....they will last for yearsI just went to another mobile food pantry this morning, and they gave me 4 more pounds of the shelled walnuts, which now makes it 20 pounds, minus those I have already eaten or put in my wife’s big birthday brownie. (She won’t eat walnuts straight, but loves them in homemade brownies.)
I definitely need ideas on how to preserve some of these nuts, but I don’t want to hijack this thread.
So I am going to head over to Granny’s Kitchen, and put out an inquiry for ideas on how to preserve my stash of nuts.
If you have ideas on what I can do, would you be kind enough to post your suggestions over there?
Please bear in mind that I am not an experienced cook or canner like alot of you. You all probably know how to do alot of things I don’t yet know how to do.

I love onions but the white and yellow onions lately the outer layers are soft and rotting. Have to peel away over a third of the onion to get to usable onion. This isn’t a one off and it’s been continual. Have went with red onions, not my favorite but it seems to take longer for them to turn.

Gooood stuff.At the Family Dollar store (SE MI) yesterday, I found several cans of Margaret Holmes Tomatoes, Corn, and Okra. Shelf price sticker read, "$1.25". I thought it was a bit high, but snagged several cans, 'cause I LIKE THIS STUFF! At checkout, they rang up at $1.00. Was going to go back for more, but found out Wally online had 'em for $.98/can. Ordered a bunch for delivery. I love to add lots of okra from my garden to the pot.

The baby green ones are the ones we love and I try to keep a good stock of those because Ham & Limas are one of my husband's absolute favorite meals. But the dry ones are harder to find than they used to be. I can get frozen baby green limas pretty much every trip to the store (and I do have those in bulk). I was crazed about green limas a couple of years ago, initially I had to go to a couple of different walmarts in other towns to find them and then my closest w/m had them again. You can order from w/m on line but they are pricey.I like the Pictsweet brand, too. If my freezers weren't full, I'd have room for more frozen veggies. I can't find the dried version of green limas anywhere. I use to get them at Walmart. I wonder if I could order them online? I'll check when I make out my next order. I don't know why I haven't thought of that sooner.

(Amounts depend on how much you need to make, can easily adjust. Fly by the seat of yer pants kind of thing.)
1 or two cans Margaret Holmes Tomatoes and Okra
1 or two cans Bumblebee (or any other brand) Tiny Shrimp, undrained
freeze dried or dehydrated celery, amount to suit your taste
freeze dried or dehydrated green pepper, amount to suit your taste
freeze dried or dehydrated minced or chopped onion, amount to suit your taste
Old Bay seasoning, to taste
splash of Worcestershire, if desired
shake or two of red pepper flakes, if desired
1 can chicken, undrained and broken up in chunks, if desired
1 can diced potatoes or equivalent, if desired or need to stretch to feed more people
Can throw in cooked rice (or could even use Minute rice if you have it on hand) if you need to feed more people
Bring to boil, turn down and simmer for ~10 - 15 minutes. Taste and adjust seasoning.
