I oven can nuts. I spread them on a cookie sheet, and heat thoroughly in a 300 degree oven for 20-30 minutes. You don't want to brown them, just heat them.

Quickly dump into sanitized canning jars, and secure lids. I do one jar at a time, leaving the nuts in the oven until I pack them.
The jars will seal as they cool, and the nuts store perfectly for many years. When we moved, we found some pecans from 2005. I paid $3.53 a pound! We opened a jar- they were perfect.

we use and store a lot of nuts . . . almonds - salted and smoked; unsalted sliced and whole; cashews whole - salted & roasted; whole raw; pistachios - salted shelled and unshelled; peanuts raw and roasted salted and shelled walnuts. typically we buy these in bulk and package them down - vacuum sealing in 1/2 gal or quart mason jars with one 100 CC O2 absorber in the quarts and 2 of them in 1/2 gal. the KEY to successful long term storage is COOL - DARK - DRY

I see a lot of discussion on inventories and rotation. . . well I had an interesting experience Wednesday. I went into the fruit cellar to retrieve some sliced almonds for Raggedyann who was baking muffins. we buy them in bulk from Sams - generally TWO 2 lb bags at a time - then I pack them down into quart mason jars and vacuum seal them, label and date the contents and set them on the shelf - being careful to rotate stock as I do that.

well lo and behold I found a jar of WHOLE almonds that apparently "got lost" . . . it was dated 11.25.03 if you can believe it. never thinking it was going to still be good I carefully unsealed it - to that long SSSSSSHHHUUUUCKKK sound of a good tight vacuum breaking . . . and those almonds were in EXCELLENT CONDITION. not the slightest odor or taste of rancidity - - - shocking when you consider all the oils that are in nuts.

in fact I am nibbling on them now - 2.2018 minus 11.2003 . . .

14 yrs and 4 months sealed and VACUUM PACKED in COOL DARK storage and good as new . . . I'm both pleased and shocked - but that's the truth about a good seal and cool darkness"

Yes, the freezer is where I store almonds, walnuts and peanuts. They have held up very well...using some from 2006 to 2008 with no problems.

I guess it just depends on how much room you have in freezer vs. dry canning/vacuum packing.

Exactly. I can them, because its so much more convenient. But they definitely freeze well, as long as you package them well. They can absorb some funky odors or freezer burn if not wrapped adequately.

I usually freeze them in thick freezer bags. They seem to be just fine, but then again, I bake with those too.
