Happy Tuesday Evening everyone! SB hope you pulled off the fru fru gathering! I am sure you did because so many were praying. My chicks have turned into hens and are laying! Getting 6 eggs a day! Organization projects taking place here along with checking what we have. I too am thinning down the freezers... yes plural! I have that dread thing going on right now but I know in my heart that God is in control. Just have to get my head and heart on the same page! Oh and to all the bday people HAPPY BIRTHDAY!!

Hoping that folks feel better. Been fighting a cold for a few days now. Gift from having to be in the hospital for testing. Ugh.

And Happy Birthday to everyone celebrating theirs. I hope you had a wonderful, blessed day.

The storms today removed the frost covers from two of my plants. Looks like I may have lost both rosemary plants and both tea plants to the freezes last week. I'm going to leave them in place until Spring and see what happens. But I'll keep my mind open to looking for replacements as well.

Thanks to all for your prayers! Cary and I arrived with Mom for the family gathering, before going on to the funeral home. We walked in and were treated as if I had never left. I was so thankful for that. I guess age and time sorta heals all wounds. I felt right back at home, but I'm still country, and they can't take that out of me. Of course, Cary and I fit right back into the social circle. I even wore a bit of make up and had my hair done, LOL! Boy, did that feel strange! It felt really good being back with all the family, though. By the time the visitation at the funeral home was finished, I know there had to be at least a few hundred people there. Everyone couldn't get in the funeral home at one time. All family and friends. My uncle was very much loved and respected by a lot of folks. My aunt, too.

Today is the memorial service. I expect it to be the same, but more formal. I'm sure there will be standing room only if the same amount of people show up as was there last night. He will be buried right beside my dad and sister at the family memorial garden. Everyone in the family already has their gravesite chosen there. Uncle and aunt's gravesite are right beside Mom and Dad's gravesite. My grandparents and Mom's older brother are buried there as well. Several cousins and extended family, too. I don't think it will be long now, before my aunt passes, too. She's the one who fell and broke her hip awhile back and lost her mind after the surgery, if ya'll remember. She's bedridden with home nursing care around the clock. She doesn't even know that her DH has passed.

Anyway. I wanted to give ya'll an update, since so many have been praying for a good outcome.

DH volintered to provide dinner for last week and this week for Wednesday night prayer meeting at church. Last week he took canned chili with extra beans. It was okay. This week he was planning on taking canned beef stew (ugh). One problem is there are a couple of people that are allergic to beef. I was pretty sure the canned beef stew was going to be disgusting, although the dog likes it.

I decided to bring something else, which is requiring me to cook. I used to cook a casserole with potatoes, pork chops and mushroom soup baked in the oven. I tried it a few years and I must have left something out. This time I am using venison. DH peeled a bunch of potatoes and we thawed out two pounds of venison. Since I wanted cheese in it I looked around for condensed chedder cheese soup. I found four cans of great value, I would have though I'd have more and may have but DH has rearranged the pantry room (yay).

I sliced the potatoes about 1/4 inches and I layered them in the crockpot. One layer of potatoes and one layer thin venison (not covering the entire layer but a lot of it. About half way through I mixed a can of the cheddar soup with water and poured it all of the layered mixture, making sure to get it all the way down in the layers (well, at best I could anyway). DH thought I'd need more potatoes so he brought out two cans of diced potatoes (thank you Sherree for mentioning that they exist a few years back). so two more or so of diced potatoes and venison and the remaining can of chedder soup and water.

I've got the crock pot on high and have about three hours for it to cook, hopefully that's enough time. My only issue, besides my back and legs are killing me from standing so long) is I feel like I left something out. Probably would have been better if I'd added onions to the layers, but its too late for that. Maybe add some granulated salt to it, but its too late to get it all the way down in the mixture. Any suggestions.

We finally got back to the upright freezer and finished going through the 2 bottom baskets. One wasn’t too bad but the other that had mostly meat items was a mess. I found a 3 pack of pork chops that was dated from 2017 and looked it too, have no idea how we’ve managed to miss that for so long! That was the worst example but a few other things had to be tossed as well. I’ve noted the other items (ie fried chicken tenders, pulled pork, etc) that are good and already cooked that I can work into future meals. Now if I can keep DH from putting anything else in there maybe I can find what I’m looking for and can continue to get it better organized. I really want to not have so much in the freezers and get some of the meats from the basement freezers canned and shelf stable.

DH was out the door before I was up this morning and did some grocery shopping, he added 6 more jarred sauces and 5 cans of progresso soup to the pantry, for $1.49 each. He picked up some of the sauces last week for the same price which is a pretty good deal especially since the sauces are in glass. We’ve never tried the soups before but the price didn’t sound bad so decided to try some.

He sent me a screenshot of the store brand cranberry salad that I love, I don’t get it unless it’s on sale $3.99 so seeing it was $2.99 he thought I‘d want some. I told him to get 3, I store them in the freezer until we want one, it’s wonderful to put a spoonful or two in homemade yogurt. Well he didn’t look at the register when checking out and they charged full price $5.99 a lb box. Makes me mad when they don‘t have the prices in the system right. It’s a 60 mile round trip for us but it will be made right!!!

I pulled some leftover dressing and cooked chicken from the freezer to thaw for supper, I’ll add some green beans and call it good.

Judy~I’d go ahead and add some salt and seasoning to the top, some of it it should go down through the meat and potatoes.

That sounds so good, Judy! Anytime, you have a meat, potatoes, and cheese mixed together, it's going to be good. I would have added the salt, pepper, and onions in between layers, but yours should be ok, too. I love using those canned diced potatoes. In soups, stews, scalloped potatoes, Au gratin potatoes, casseroles, hash browns, you name it. I use them a lot when I don't want to spend time peeling and dicing raw potatoes.

The memorial service for my uncle was beautiful. Cary and I haven't been back home long. We all ate, afterwards, and I'm stuffed. There was so much food it was overflowing. Lunch was catered to their church, instead of the country club. I'm glad, cause Cary and I don't do the country club thingie. This way, there was no alcohol involved. I have no problem with anyone drinking alcohol, we do, but when you have such a large gathering with alcohol involved, there's bound to be one or two in the bunch that goes crazy with it. I've been to too many social functions at the country club to know that my family is no different in that regard. The last was a wedding reception held there for one of my twin first cousins. It was loud and some got a bit rowdy from all the alcohol. Told Cary that would be my last time there.

Anyway, enough about that. I've neglected my house for a few days, and tomorrow, it will get a thorough cleaning. Laundry needs washing, too. I'd like to get back to canning a few more things from the freezer when things calm down a bit. I've got one of my freezers almost completely meat free. There are only a few packs of bacon left in it. The rest is butter, cheeses, cornmeal, flour, and several bags of frozen veggies, etc. Our water situation has been cleared up, so no problems there anymore.

Now that we're back home, and all of the emotional stress is over, I'm just going to relax the rest of the afternoon. Cary changed out of his suit and tie and is already taking a nap. He absolutely hates that thing!

On the rearranging the pantry room, DH had taken three shelves down. Two had penetrated the floor, so he reinforced the floor in that area with 2x6's three feet out from the wall. He reinstalled one shelving unit in the area where he took the two down that went into the floor. This particular shelf was on the other side of the room and it didn't fit well where it was. He built a shelving unit there and it works very well. The other two are taken apart and in the cabin for using for something else. The room still needs some tweeking but over all he has done a fabulous job. I've helped but he had done the lions share, I would never have gotten that done by myself. He has also repackaged many many things that were in bags and boxes and yes the mice did get into some things.

God put his hand over my mouth when I started to object to one or two ways DH was doing something, it is hard but it does not need to be done all my way, particularly since he was/is doing most of the work. As for me, there is no way I could have done this by myself and I'm not able to help very much either. Mostly its horrific pain in my back, but preparing that casserole the back of my legs felt like they were going to collapse. Plus my energy does not last very long, my DH has been and is being very patient.

Another wonderful thing DH did was start using that Dawn dish soap that comes in a spray bottle, I mean it kills grease on contact. I had some but was not using it because its expensive, I'm so thankful he insisted on using it.

Last month I bought new burner pans for the electric stove and had put off using them because the stove needed a good cleaning. That soap made that job so easy. sometimes I'm my own worst enemy.

You actually turned me onto diced potatoes a couple of years back. I never paid attention to the because I'm not a potato person and didn't eat them for years. For health reasons.

We've never been able to grow our own potatoes here for some reason or another. Most of the time, when I buy the bags of fresh potatoes at the grocery store, they have rot in them. So, since Cary wants potatoes of some kind at every meal, I have lots and lots of flats of those canned diced potatoes. If we could grow potatoes here, I would, and can them myself.

B-12 sublingual if I HAD to do something, Moldy; if I didn't HAVE to do something, I slept and let my body heal from the treatements. Your body is telling you that you need rest in order to heal/recover. Of course, if you are as stubborn as I was, you might not listen... until you have no choice. Too much B-12 can cause rectal bleeding, so if you use it, limit it to HAVE to have times. CVS if you have one locally has their brand of 5000 mcg sublingual B-12 that works pretty good.

I like the small potatoes that they have at Aldi - wash, poke, toss in a corning ware casserole dish, put on the lid, nuke or bake in the oven; they can then be used for a lot of different things. I like to cut them in half then toss them with olive oil that has just a bit of ranch or other powdered dressing mix added to it, then slide them under the broiler for just a bit.

Well, I've managed to make it to the pool twice this week so far; I think we are going to try to go one more day this week. Half the time I feel like I need a nap afterwards, but I do feel better after we go - I just don't sleep very well at night if I take a nap during the day. I managed to avoid the nap today by keeping busy and getting a few things done once I got home: cleaned the fridge, took the swill to the compost pile, and washed all the dishes that resulted from that, made up a pasta cassarole with penne pasta, chicken sausage, seasonings and red sauce, threw a load of laundry in the washer and then in the dryer, ran the dust mop over the floor, carried the 7 cases of cat food I bought last week downstairs to the shelf where it lives, and picked up trash that had blown across the field and into our yard. I decided that was enough for one day!

Yesterday was middle grandson's 12th birthday, so I snagged the youngest one on Monday for an overnight visit after I got back from the pool so that daughter could take middle grandson to lunch and to do some birthday shopping on Tuesday. Youngest grandson and I met up with my co-worker Buddy on Tuesday for lunch, then those two took off to his house as Buddy had some work for grandson to do - crush cans, pick up sticks in the yard, etc... while I went to get a hair cut; first one I can remember having since Covid hit. I had them cut it to shoulder length - which ended up being 9" cut off - so that I wouldn't have to be forever pulling it back, twisting it, and either shoving it down the back of my shirt to or using a clip to put it up to get it out of my way. I hopped in the shower to wash my hair once I got home, then when I was done I got involved playing a card game with grandson and just let it air dry - walked past a mirror after we were done playing and glanced over :eek: where the heck did those curls come from?! Both daughter and Hubby thought I had it styled :lol: I decided that I liked it just fine the way it was, and I have to admit that I'm enjoying not having to fuss with it in any way.

Tomorrow, I need to get in contact with the Social Security Office as I wasn't able to get in to my online account; I'm hoping that they can help me get in. I hadn't planned to start drawing social security until a few more years down the road, but in case that's not an option, I want to be prepared with the information. Gotta get those ducks in a row :lol: (I don't think I have ducks; I think I have squirrels. And they are using meth. And are quite possibly rabid.)

How did it turn out?
It still didn't finish cooking in the oven, so I took it to church (their oven is not working well) and transferred it to two big pots and finished cooking it on top of the stove. It actually tasted really good and everyone said the liked it. I'm glad that's over. There was some left over so we'll be eating on it for another day or so.

We are going to the VA in the big town today. I have a followup with PT for my knee and my regular 3 month check up with my PCP. I get a few pain pills every month which is why I have to go every 3 months. Its stupid because there is no way I could overdose on the amount that is prescribed monthly. But whatever.

There is a really nice lady at church that is absolutely nuts about expiration dates, she will not keep anything in her kitchen that is past the best by date, she will be in a world of hurt if what is predicted actually comes to fruition.

I got up really tired this morning. I was expecting to get a lot done today. I've managed to get one load of laundry washed. I went ahead and put it in the dryer. I vacuum sealed some food items into canning jars that I had pulled out of the freezer a few days ago to thaw such as Hamburger Helper, Mac & Cheese, and Rice a Roni. I had bought 4 bags of egg noodles at the grocery store, and I refilled empty jugs with those. I emptied them from use, so I didn't add anything by refilling those. Just replacing what I had used. I've still got a few more items I need to get out of the freezer to vacuum seal, but not today. I don't think I can hold out to get everything I had planned to do today done. It can wait.

For the first time in a long time, I opened a new jar of mayo from my pantry last night, and it was ruined. I opened a second jar that was just as old, and it was also ruined. It's been quite a while, since I've lost something from my pantry. The jars of mayo had 2020 on the label I date everything with. The 3rd jar I opened was dated 2021, and it was still ok. I need to be using up the rest of the mayo in storage pretty soon, so I can start fresh again. I see lots of potato salads and pasta salads in our near future.

I'm thinking right now as tired as I already am that it will just be fried egg, ham, and cheese sandwiches on buttered toast with hash browns for our supper tonight.

I had my post surgery follow up appointment with the surgeon yesterday. All went well. He released me to be able to eat what I want but cautioned I might want to ease back into it. I return to work on Jan 23. He reminded me to continue to take it easy and I’m still healing on the inside.

I bought some more OTC medicine yesterday as well as ordering two big packs of tp off Amazon and two of the mocha coffees hubby and I mix in with our Folgers.

Slow and steady ……

I'm still praying for your recovery. You'll be fully healed in no time! Just continue to take it easy for a bit longer.

Hubby and I also found out we’ve had direct exposure to Covid for a pretty decent time period (same living quarters) so are hoping the “cooties“ don’t get us. We have increased vitamins, fluids, etc.
I am amazed (and thankful!) I didn’t bring home something from the hospital. We have had it twice- last time (that I know of) was Aug. of 22 although I had slight sniffles (didn’t test) around Thanksgiving.

Prayers continue for all here. :rs:

What the frag! I had a friend who just told me that family demanded that they be allowed to visit on Christmas. And it turned out they had COVID and knew they had it. I swear if I find out that someone deliberately exposed my son and myself there's going to be some really, really loud yelling.

DH and I are getting back into a more normal routine and back to babysitting our little granddaughter. She giggled when I told her that we had missed her face! It’s only been since Sunday but it’s true.

I‘m still going through the fridge to get things used up that need to be used now. Yesterday I made a batch of sausage balls using up the roll of sausage that had went out of date a day or so ago but was still good, and a pack of cream cheese (more on the cream cheese further down). Today the Princess and I used up the rest of the pre made cookie dough, which made her very happy. Used up some veggies and made a bowl of coleslaw to go with some pulled pork I took out of the freezer for sandwiches tonight and I got some more veggies ready for a beef stew I’m planning to make tomorrow. Peelings/trimmings and a hunk of not so great iceberg lettuce went out to the chickens. Finished off the rest of the cranberry salad from an opened box with some of the yogurt. Still have a quart of yogurt to use up too.

I’ve still got more stuff in the fridge to use up pretty quick, both because they need to be used soon and because there is still so much in there that it makes it harder to see what we have and to give it the good wipe down that it needs. I discovered a half gallon of milk that my youngest DD forgot to take home Sunday that oldest DD brought over because she had forgotten it at her house. I’ve also discovered that DH needs to quit buying apples and cream cheese. I couldn’t believe my eyes at how many apples were in one of the produce drawers. And even though I already had 8 packs of cream cheese, he bought 5 more yesterday, thankfully they all have great dates. I’m kinda scared to look in the basement fridge.

Cream cheese here is $4.00 last time we went. I was shocked!
