On of my favorite "chilled salads" is sliced cucumbers and onions in vinegar and oil. LOTS of vinegar, to the point the cukes and onions are marinating in it. Into the fridge for 12-18 hours, then spoon out the cukes and onions into a bowl. Salt and pepper gently. Eat.
That sounds related to refridgerator bread and butter pickles, if you like sweet vinegary stuff. It more reminds me of a cucumber salad than a pickle thing as well.
