On of my favorite "chilled salads" is sliced cucumbers and onions in vinegar and oil. LOTS of vinegar, to the point the cukes and onions are marinating in it. Into the fridge for 12-18 hours, then spoon out the cukes and onions into a bowl. Salt and pepper gently. Eat.

That sounds related to refridgerator bread and butter pickles, if you like sweet vinegary stuff. It more reminds me of a cucumber salad than a pickle thing as well.

Just seen this post. I'm with the sliced tomatoes and salt people. Fried eggs and tomatoes for breakfast is my fave. If you haven't tried them the Russian black tomatoes are out of this world. Best tasting tomatoes around. I grew six Blacks this year.

I've never heard of black tomatoes! Now I'm going to look them up :)

Never mind, I managed to find your post and as soon as I saw the title of the book it’s from, I knew I had it in my library.

I haven’t had fresh tomatoes since I came to Texas. If you wanted to send me a few, you’re close enough that they’d probably survive. Tomatoes are my favorite thing in the world.
We sent fresh tomatoes to DH's dad from VA to AZ
We put tomatoes in a plastic sandwich bag ...zipped them
Then packed shredded paper around them and sent them priority mail.
They did great. Just a little messy to unpack the paper. The tomatoes did great

As usual we planted way too many tomatoes this year, and despite all the rain we've had they are looking great. This in addition to the canned tomatoes we get in commodities. We really don't use tomatoes for much. We do love fresh peeled and sliced tomatoes and this year I'm determined to fry some green tomatoes.

I made some spaghetti the other day with crappy canned (in a can) spaghetti sauce and DH said it was too tomatoie. I agreed. We had left overs that I will probably make some kind of casserole with lots of cheese (which we are blessed to get in commodities). Plus I've dehydrated tomatoes in the past and ended up giving them to the goats, which they love, because I really didn't know what to do with them. I use to use canned tomatoes when I was raising my children, but my DH doesn't much like the things I use to cook.

What I would like to know is what to do with all the canned and fresh tomatoes? Suggestions will be appreciated.

I love the taste of fried green tomatoes. I can't find commercial cracker crumbs, just not to be found for several yrs. All the stores here only carry panko crumbs, the taste is just NOT the same. That's how I used to fix them, dip in egg then crumbs then fry till crispy. Yum!

I cook mine down with herbs and spices and make my own homemade pizza sauce. Tried freezing one year, ice crystals inside tupperware container melted and made it too watery when thawed. Has to be canned up. Slow simmer and cook it down for about 3 hrs beforehand, stirring till it gets to that good gravy, thick consistency.

Son says he's seen the black tomatoes while out jogging in a neighbor plot, says he may ask for seeds. Very distinctive look!

Dennis, I would send you some but our regional mail hubs in Milwaukee and Rockford are still shorthanded, painfully behind.

Have you seen all the veggies and fruit on facebook marketplace, its like an online farmers market, just plug in your location.

Tomato soup or add some to your Scotch broth recipe.
