The ground is white this morning.
We had a bumper crop of acorns this year too. The goats love them.

Ever done that before? I learned the hard way to rinse rinse rinse to get rid of the bitter tannin!Whenever I find an oak leaf on the lawn, I remind myself to go looking for the tree. I want to make acorn flour.

Use the acorns from the rounded lobe leaves…..white oak family.
Bur oak is best….biggest acorns/least amount of tannin.
Hull them.
Split them.
Boil in 2-3 changes of water.
Dry well and grind as needed.
Mixed with whole wheat flour, or half and half with buckwheat and then whole wheat flour…..
A little real butter and maple syrup and you have the best pancakes the backwood homestead can muster.
I haven’t done it, but I found a youtube video about it and it did mention the tannin. Thank you.Ever done that before? I learned the hard way to rinse rinse rinse to get rid of the bitter tannin!
Yup. Same here. I think it's 20F out there right now and at dawn, of course, still dropping. So bloomin' windy the wild turkey flock won't even come out into the field this morning. Waiting for some sun I guess. They are very bright birds. The north wind has been blowing for a couple days. The high tomorrow is 33, tomorrow night down in the teens.
