I think I'm going to be doing a lot of dehydrating and making jerky.

My back will not be happy with me if I do a lot of canning.

I'm also a little concerned about having more frozen meat than what can fit into a maximum cold cooler since we're going into summer. I will give that further thought. Maybe rent some space in a meat locker and let them worry about keeping a genny and fuel if there are widespread power outages this summer.

I don't know. I don't usually store a lot of meat in the summer anymore: this is the time of year I switch over to eating a lot of salads. On the other hand there's a lot of validity to getting with a few friends and splitting the cost of some bulk beef and pork in advance of potential problems this summer.

I have a 16 quart Presto and can on a gas range. I let it depressurize, take the lid off and use the jar lifter to set the jars on the board, which is a 1" piece of plywood to protect my counter. You don't have to pick this thing up when it is full of jars. Happy canning.

I also put white vinegar in my water so limestone scale doesn't build up on the glass jars. When I am done canning, I use that water from canning meat to cook rice to augment my dogs' food. They love it. I pour that water in the puppy rice pan while it is still warm and don't waste a thing. That water and two cups of rice is enough in addition to other munchies to feed them for a week. It's pretty good people food, too and the basis of countless casserole recipes.

I have a 16 quart Presto and can on a gas range.

I've got a crappy electric range with limited counter space. I'm just not set up for canning, and I'm just about over it. I can freeze veggies in a quarter of the time and dehydrate apples and such for chips using a corner of the kitchen table for the dehydrator.

If I were caring for a family, I'd recruit a teenager or two and get 'er done, but such is not the case right now.

Buy a pressure canner and start canning food, hint there’s going to be a shortage on those real quick like, you heard that here first. Canning groups I’m in saw an uptick in memberships this past week in the thousands, same with the gardening and chicken raising groups.
Any brand you like in particular? I’ve been looking. My sister got my parents and I have a stove top one for cooking that is probably older then me.

I was curious so I checked Lowes, HD, Walmart... all are sold out. Not just the small 5,7,10CF models, but ALL sizes. And prices??^^^^ We , in the last year, have seen the small ones on sale at HD & WM for around $150. Now they're running $300 & up.

This beer bug sure has folks spooked, guess all those factories in China are still closed.

I’ve been trying to get a 7 cu ft chest freezer for a month. I’ve looked at big box stores, local appliance retailers, and Craigslist. Only new freezers costing more than $2000 are available. (The ones on CL look like they were dragged a mile behind a pickup.) Absolutely nothing. One outlet had a large banner that said: “Freezers are not available due to a nationwide shortage.” Well, that’s that I guess. I thought I’d mention it.
I just checked the Home Depot website. In Seattle there is no problem getting a freezer.

I got mine the day before they started shutting everything down. Got the last one they had in stock that size. They didn't know they even had it. One of the employees was looking for a specific number to order it and found it. Bought it on the spot, on sale.

I think one part of the problem is that most, if not all of the regular consumer chest freezers are/were made in China. Second part of the problem, people bought the remaining inventory to be able to stock up/hoard.

This ^^ theres a shortage in the UK and in Ireland too.
Everybody ran out as soon as it gained traction in Europe and bought freezers so they could fill them for the lockdown.

I haven't been able to find square freezer containers, they used to make them, pint, pint and half and quart, just fill them and freeze them, they stacked on one another and were handy, I tried finding them and no luck, they have some but these were a good sturdy plastic, and reasonably priced, now all I can find are like ziploc, now true I haven't bought any in probably 15 years or so, but I find it hard that they aren't made anymore.

I started canning in a fifth wheel trailer with a 20" range. It is doable.

The shortage of freezers down in Huntsville, Conroe, The Woodlands and that general area started a few months ago. We were helping friends try to find one, any size, new or used, without any luck. If there is an Aaron's rents/sells or a Conn's, or any other rent to own kind of store or used appliance dealer, there might - might - be one available. Looking pretty grim, though.

The all American pressure canner is ,y favorite, I’m using my moms mirro.
Second vote on the All American canner...because of my elevation I have to do 12 lbs of pressure, so I set jiggler to 15, turn it down and check the gauge often to make sure we're 12-13. Worth the money, just don't forget to vaseline the rim.

The 40 yr. old freezer I have isn't for storing meat. I use it to store cheeses, butter, cornmeal, flour, and Bisquick. My newer freezer is to store only meat. I know I could can all the meat out of that freezer, and use it for those items, but my new range won't allow me to pressure can on it. As a safety measure on my range, the elements have a built in heat up cool down cycle. They won't hold a steady temp. I hate it for that one reason.

You can get a crawfish burner for around $50.

I would avoid the high pressure ones tho. They may not be as easy to regulate the heat with.

thats a good price, a couple years ago I got a delux whole shebang turkey fryer w/2 pots unit for $20 from a guy who decided all that hot oil was just too dangerous, so it was brand new too. Still is.

Yes, we have one, but it's been too cold and rainy all winter to use it. I have a pressure canner, just have never tried it on the turkey fryer. I would also have to use the fryer base to do all of my water bath canning, too, if I wanted to can anything that way.

I have been wondering if I can replace the stove burners that are on there now with regular burners without it doing damage to the stove? This is a new stove range, and I sure don't want to damage it!

that's the reason I couldn't operate the still on elec range

The price of canners have gone up also. The prices have gone up $20 minimum, which for many is about 30% of the original cost. Glad I have gotten mine years ago.

Not that they kept much in stock to begin with. Our local places are apparently sold out until middle July.

The chain is being strained.....

Just like generators in SE Georgia after a named storm. They all sell out and after the storm, are returned in the box or sold on Craigslist.

Neither do we. Our biggest meat consumption during summer is for the cats. I have been thinking of hunting to provide for that, but the costs to get going (around here) from scratch are more than I can justify at this point.

The cost of a decent gun / scope / other items to breakdown the deer would run about $1500 and using only 1-2 deer per year with a yield of only 40 lbs per (we have dog sized deer) makes it harder to make work. It would take no less than 3 years maybe 4 to get my return for the money. I have other things that have paid off faster, like canning. That I still need to do or have just done.

I noticed a couple of days ago, that the smaller freezers were gone also. I thought that it
was a fluke, guess not. Last summer I purchased another 7cc and a 5 cc and they were on
sale..(hehehe) They are easy to move and only use 70-90 watts.
I think a person needs to do some long range buying, when possible.
We got a 14.4 cft a few years ago, but at the time they were just about as cost efficient as the 7s. Not sure how it is now, but it worked well and fits a single person or a pair real well. We have a couple of turkeys, frozen preps, 100+ pounds of flour, etc and still have enough room to get to things and it doesn't use much in energy.
