When to pick apples

This is the first year that I have really gotten a good crop of apples. When do you know that they are ripe and ready for picking? I remember hearing that apples are better after a frost. That could happen later this month or early September.

The way I test for ripeness of apples is to cut a few open. If the seeds are brown they are ripe. If the seeds are immature then the fruit is also.
