Haha..I knew I'd get myself in trouble mentioning it.
There are many variations out there, but this is the one my mom and I have used forever. Makes a lot of batter.
Tip: You can skip the All Bran and use 6 cups of bran flakes instead. I get the Walmart brand and it's fairly cheap - like $2.50/box.
6 Week Refrigerator Bran Muffins
4 cups bran flake cereal
2 cups All Bran cereal
2 cups hot water
Mix in a big bowl and let soak.
In another big bowl, cream together
1 cup oil or butter
1 1/2 cup white sugar
1 1/2 cup brown sugar
then add
4 eggs
4 cups buttermilk (regular milk with a little vinegar works too)
1/4 cup molasses
Stir in:
the soaked cereal
and these combined dry ingredients:
5 cups flour
2 Tbsp baking soda
1 Tbsp baking powder
1 tsp salt
2 cups raisins or Craisins (I've also used chocolate chips, dried apple or other fruit - whatever suits you)
Bake at 400 degrees around 15-20 minutes depending on how big you make the muffins.
Keep the remaining batter tightly covered in the fridge for up to 6 weeks.

I'm only 12 years old but already like to cook and bake. This batter can be made ahead and stored in the refrigerator for weeks, so it's easy to make yummy muffins fresh each morning.
