OT/MISC What's For Dinner?

Youngest grandson's birthday is today so I'm going to pick up Chinese for supper; daughter is ordering, other than my order of General Tso chicken and fried rice, I don't know what we're having. I'll come home and have homemade tapioca pudding for dessert - if I have room. May add a few slices of banana to it, just for kicks.

My lovely neighbor gifted me with a huge oval crock pot that makes my other huge crockpot seem small.

I had two heads of Red Cabbage left and one more pack of Kielbasa. Blaukraut- yay! I added potatoes to make it stretch.

It is killing me. The scent coming out of that kitchen is like a German restaurant and it's not ready yet. Soon as it is, my neighbor will get her own bowl. We take care of each other out here.

We ate at our favorite mom and pop Mexican restaurant, before coming home from a day out shopping. I'm tired. I finally got everything put away. I'm about ready to kick back, with my feet up, and enjoy a glass of red wine.

Hopefully I can eat dinner. I take the methotrexate Chemo on Saturday morning, hope it wears off soon so I can eat dinner. If I eat when I'm on the stuff I get sick.
If I can eat, the missus says well have a nice salad and veggie burgers. Went to doc this week, my A1C is messed up. Wife has me on a boot camp of healthy eating until it goes down. All healthy and NO cheating..

Good luck with that man. You can do it. I'm not cooking tonight.... dont feel it. I'll do spaghetti tomorrow. Take out fajitas tonight.

I usually don't cook much during this heat and humidity. It's been so hot today that we've turned our a/c on earlier than normal for us. Since the house is already cool, I'm gonna cook a bonefide meal tonight.

Cole slaw, fried battered yellow squash, boiled potatoes in butter sauce, batter fried pork chops, and cornbread. No dessert.

Doesn't look like our heat is going to break anytime soon. After tonight, it'll be back to eating sandwiches and salads.

Leftover dry-rub ribs (yay! no oven!), Instant Pot sweet potatoes, Greek salad (baby greens, spring onions, cherry tomatoes, feta crumbles, kalamata olives, pepperoncini, apple cider vinaigrette), mango chunks.

I'm hiding some Tate's Bake Shop gluten-free chocolate chip cookies for dessert. Don't rat me out, guys! :flngl:

I was planning to make Cary his favorite Oreo cake, but decided not to turn the oven on more than I had to. He'll survive.

Peeps in my hovel are on a low carb kick. Buncha carb nazis.
Today they get a cheat meal. I'm grilling burgers that we'll eat with no buns. Bacon cheese fries and then ice cream.

I carb up while they sleep. :)

I dunno. It's 90 out but we have AC (thank God). Went shopping yesterday, so there's a variety of things to choose from.

Hmmm, decisions. Maybe fresh chicken tenders fried in butter until golden, then put them on top of a big mixed green salad. Yeah, that sounds easy. And a side of something simple, don't know what. I forgot tomatoes, but did remember green onions - love those things. Diced green pepper, Goya salad olives. Cucumber. Good croutons.

Oh God..I know I'll pay. Went down the jambalaya rabbit hole today.

Spicy sausage (browned with just a little bit of sugar for extra caramelization), bell peppers, vidalia onions, too much garlic and Tabasco for any sane human being, homegrown canned chicken stock with added butter just because...and plenty of rice to soak it all up into a heavenly brew.

Not getting on that old scale tomorrow I tell ya.
I am also making a southern jambalaya tonight. My family really loves it and is always a hit. I use conecuh sausage and diced chicken with onions, peppers,celery and sauteed in butter. Add rotel tomatoes and chicken broth and rice.

It's really hot here too today. I haven't felt like doing much of anything. I did make a run to the farmer's market this morning and loaded up on home grown tomatoes from the Amish. Our garden is producing well but no large tomatoes yet and I was hungry for caprese salad.

Dinner is going to be leftover baked chicken and sweet potato cubes, caprese salad, and popovers. Thank goodness for air conditioning.

We're having spaghetti, and homemade key lime pie. I wasn't real happy with the pie, I lost my original recipe. The one I found online is lacking something. It's tough in the summer to find light desert recipes that don't require turning on the oven.

Nope. Never. No tomatoes in my jambalaya. Pure Cajun...not Creole style. :)

I envy those tomatoes. Haven't been able to grow Brandywines since our place in Upstate, N,Y. Or any of the big tomatoes
My plants are so over loaded that they toppled everything I had holding them up. Stakes and pulled cages out of the ground that were in about 10". I'd say at least 10-12 pounds on each plant. Just hope to keep them going with all our extreme heat and no rain. I water them every other day.
