I cut the package of bacon in half.
this way, one piece of bacon becomes two pieces of bacon and all is right with the world once again.

I buy that large package of generic chicken breast from Wal-Mart that has six breasts.
When I get home, I cut each one into four strips, put it in a bag, and throw it in the freezer.
When thawed, add fajita seasoning and marinade.
OR boil it about 5 minutes, pull it apart and simmer it in taco seasoning.
OR quick fry with some olive oil and Italian seasoning for Fettuccini Alfredo.
OR boil it 5 minutes, pull it apart, let it cool, add mayo and relish for chicken salad sandwiches.
OR add some sausage and shrimp and creole seasoning, beans and rice for some gumbo.
OR . . . never mind, feeling like Bubba Gump about now

I have been having trouble mustering up an appetite again lately- that helps.
before this permanant solution, I stopped using meat as a stand alone snack, and made sure to drop them in a salad or roll up with cheese n veggies instead.

a flour tortilla, a plop of refried beans, a little meat, a little cheddar cheese, some salsa, and some sour cream.

chili (which is beanless), some pintos, a lump of corn bread, cheese, sour cream, salsa. you put that lump of cornbread in the bottom of the bowl, top it with the beans, and put your chili on top of that. makes it look like there is more chili. then the cheese and sour cream.

I make lots of casseroles.

Add a crust and veggies.....it is a pot pie!

Add spaghetti noodles and tomatoes sauce with exquisite seasonings and it can be spaghetti, of Alfredo, or any type of casserole.

Add gravy and rice with various seasonings and it can be gumbo or jambalaya.

It all has has to do with that this you add to it to increase the number of servings, enhance the flavor and make one glad for the boost.

I forget which poster mentioned this to us on one of the earlier threads on this subject, and it struck me as a brilliant tip.
I hope if she sees this post she'll give herself credit for it:

She said she'd take a pound of hamburger for a meal when the kids were growing up, and cut it back to 3/4 a pound, and make a hamburger patty out of the rest, then when she had enough patties in the freezer, they'd have those rather special treats for din-din.
