Hope y'all have a nice visit!We got a nice surprise last night. Cary has a cousin on his dad's side who lives in Dallas. He's also retired. He has been in Boston visiting with his daughter (a transplant for her DH's job). She decided to come back home with him for a couple of weeks. He called Cary last night and asked if we wanted to go out to eat with them, tonight. They were staying in Tupelo, before they finished their journey on to Dallas. Cary said yes, so here we go. I'm doing extra cleaning today getting ready for their visit, tonight.
Cary found this 3rd cousin online while doing his genealogy on his dad's side of the family a few years ago. They've talked on the phone many times, and he came for a visit last year. We've never met his daughter, so I'm a bit nervous with her being from Boston. Lots of liberals up that way. They are also Mormon, which doesn't matter to us, except I don't want to stick my foot in my mouth over something. I told Cary to stay away from conversations having to do with religion and politics. LOL!
Off to dust, sweep, and mop...........etc.

We're hoping for some much needed rain today. The forecast is calling for a 60% chance today through the afternoon, then overnight tonight with severe thunderstorms possible. Like Sherree, we've had forecasts for rain that seem to go around us, or don't amount to much more than sprinkles.
I love Rural King too, closest thing we have here is Tractor Supply, but they are not the same. Closest one to us in 500 miles, so we only go when we go to Illinois to visit DH's children, but that has been almost 4 years now. I doubt we'll make that trip again.We've been going through clothes adding some more gloves socks and such.. most likely will order some more jeans for both of us... have already gotten more shoes...boots..but want to add some extra shoe laces..
Made run to Rural King this weekend and grabbed some things there...we don't go often as it is about 140 mile round trip..we sure love that store..they have the best prices on things here.

We have several Tractor Supply near us they are ok but they don't carry near the stuff that Rural King does.. I got fleece lined tights for $4.49. I grabbed three different colors navy, black and dark gray at that price..too good to pass up.... They had cotton flannel shirts for $15.... MissouriTractor Supply is what we have in small town, but we have Scrugg's Farm and Ranch is big town. No Rural King for us, either. I don't even know where the closest one of those would be. Maybe, closer to Memphis.

We ended up getting .6" of rain last night, and had a brief period of pretty brisk (60mph) winds that quit as quick as they started. Lots of lightning in the area, and some places got more rain than we did. We've got another chance for rain later on in the week, so we'll see.
SB~I’d be interested in ways to use the canned roast beef to as I’ve bought some but haven’t used it yet. We may just have to do “experiments“ and see what we come up and share the results.

Cary liked it ok, but I won't fix that again. Smoked ham is much better. I've used the roast beef twice, now, and neither time was to my liking. I think I'll be saving it for dog food or an extreme emergency food. It just doesn't taste like my home cook roast beef. I didn't expect it to, but I thought it would taste better than it does. Everyone is different, though.
I made fried cabbage and purple hull peas with garlic bread to go with it. I ate fried cabbage.

Sherree, this was store bought roast beef, correct? I don't care for the texture of the store bought canned meat either. I do can chunks of beef roasts - whatever is on sale at the time. Cut the raw meat into cubes, make a weak broth from a packet of onion soup mix, bring it up to a boil, and drop the chunks of meat into the broth and let them simmer just long enough to seal the outside of the meat. Then I pack them in a pint jar, add the onion soup 'broth' to the shoulder, then can the pint jars of beef chunks for 75 minutes at 10# pressure. We use it for quite a few things - beef stew, beef and noodles, beefy vegetable soup, beef and gravy over rice, etc... Sealing the outside of the meat by dropping it in the boiling broth for a short time seems to keep it less 'mushy'. Like you, I prefer ham in my scalloped potatoes, although smoked sausage is also pretty good
This week has been kind of crappy, but I'm hoping things take a turn for the better soon. I had a hypertensive crisis and ended up in the ED; thank goodness the hospital was nearly full so I was treated and released instead of having to stay - helped to be a nurse, and to have a husband who had worked EMS in the ED and can promise the staff they'll monitor me. I'm off work until Halloween (or until my bp stabilizes) and will likely be changing MDs soon - daughter works on some of the medical folks in her town, and is going to see if she can hook me up with one of them. And my work schedule has been changed so I'm working with a different group of co-workers - the QUIET ones. And speaking of work; I've got to go over and grab some paperwork, so I'd better get going!
