I'm currently located somewhere beyond pissed.

One of those old church ladies had a bunch of missionaries she "claimed" wanted to learn how to preserve food. I made the mistake of volunteering. A date was set. I picked up food for the class to preserve. "Something" came up. Class cancelled. So now I've a fridge full of Thanksgiving and fresh foods.

The next few days are going to be busy. Did I say I was pissed?

Prep wise - I’m not sure where I left off from last time, but somethings I’ve done were to stock up on turkeys while I was able to get them at 29 cents a pound. We now have five plus LOTS of turkey leftovers from the 22 pound one we cooked on Thanksgiving.

I’ve continued to replace things as we use them and am trying to stay within my budget for all things. Speaking of which, I will probably try to list a couple things to sell that I’m not using. Lots of smaller items can add up quickly.

Our five chickens continue to lay even though daylight hours changed. We get five eggs each day which is a blessing! I’m shocked.

Little by little. Slow and steady we continue.

Good perspective. Guess the Lord wanted me to pad the larder. I admit to slacking in that area. I finished getting the meat cooked up and ready to can.

It's not my time I mind wasting. If I had, I wouldn't have volunteered. It's the food. The once fresh veggies aren't. They're far from compost but they need attending to ASAP.

Built a new compost bin yesterday.
Oh, I detest winter! We are on winter footing here with temps in the low teens warming to low 40's for highs, normal winter temps here. It was 11* this morning. I don't like working outside in the cold temps.

Welcome to the skinning shed, which right now is a closet in my house. We’re skinning red foxes today, young ones mostly. We spent one day setting snares. Then we called predators, just for fun. We stopped because we were too successful. Skinning animals in the house usually gets me gets me an earful. Marten trapping soon. We’re still close to town the freeze up isnt safe Yet.

People don't care anymore and it doesn't seem to matter what age they are. They will show up late and blame you. They will not show up and tell you to screw off. Civility has gone from society.

The last canning group (7 total) has 3 failures to seal. All were my fault. I used the lids one time too many. I was trying to save a bit, but you live and learn. I am canning them once again.

It did work out well in the end as I realized that I had 20 dozen of the large lids, but not one box of the small lids. I need to correct for that. I had forgotten that family keeps giving me jars that are small lids.

Thank you for starting the thread, Old Gray Mare; with the two younger grandsons here this weekend - well, three if you count the dog (though he is the best behaved of the bunch :lol: ) I wouldn't have gotten around to it until after the boys were fed and I'd had at least a cup of coffee!!

I'm sorry to hear that your canning class was cancelled - but, as Briches said, perhaps the Lord is watching out for you - and not only in you having more stock for your own pantry, but perhaps those were not people that it would have been safe to have know where you are and what you might have on hand.

Hubby had an IDPA shoot on Saturday so he was up and gone early; daughter texted shortly thereafter to see if I could watch the boys as she needed to go grocery shopping. I drank a little coffee, then headed over to snag them and - unusual for us - we headed straight home. We had to wait for the grass to dry before they could ride their dirt bikes so the younger one and I got out a couple of pair of loppers and a rake and started working on the big flower bed. By the time we got it done, the grass was dry and Hubby was home, so I watched the three of them ride their dirt bikes - the little one (70 cc) lapped the bigger one (110 cc) twice in 10 minutes in the main area behind the shed, and then continued riding in other areas on the farm for another hour plus after the older one went inside to his tablet, so I think Papaw has found someone to take to the motocross track with him. Hubby did find another (used) engine for the bigger one's bike that is auto shift, so he may swap it out until the bigger boy is more comfortable with shifting gears (and me too, since that one is about my size lol!)

Today, the younger boy was back on his dirt bike as soon as was dry enough - he did stop a few times to load the detritus from me finishing cleaning up the elderberry grove and all but one of the flower beds in the buggy, but then followed Hubby on his bike as he took the buggy down to the gully to unload it - they took several side trips so that the boy had more ideas where he could safely ride - and I have a notion that there will be a bridge built across the creek at the bottom of the big gully soon :lol: I won't complain - that'll just make it easier to get to the blackberry patch without walking all the way to the high end of the gully to get around!

My work schedule is a little more sane this coming schedule - as long as no more of my co-worker's spouses come down with the 'Rona and share it with my co-workers, that is :rolleyes: Daughter and the boys will be gone over the school Christmas break - possibly longer if she finds work out there and a reasonably priced place to rent. I've got 4 days off over Christmas starting the morning of Christmas Eve, but since my kids won't be here, I might see if any of my co-workers who have little ones at home would like to swap me for their Christmas eve night shift, or Christmas day or night shift, or the weekend following since they may be having family gatherings. Hubby will go to his Mama's Christmas day, but his Sis has mask insanity and is totally freaked by the 'Rona, so I am staying away from his Mama to keep her from freaking any more than she already does.

I'm not seeing much of anything in the sale ads that makes me want to spend money. Walgreen's have stopped their balance rewards program and moved it to something else - this is the second time they have 'stolen' my rewards - about $20 worth each time. They say that they will transfer them over to the new savings program, but when I tried to sign up, they said my phone number wasn't in their system so they couldn't text me the code to get in. Odd, since I've been typing that number in their machine ever since the balance rewards program began... As far as shopping goes, I do probably need to go through the OTC meds and stock up as needed - the boys are getting big enough that I don't need the children's formulations of certain cold/allergy meds any longer, so that cuts down the number of things I need to keep on hand.

I do plan to hang in town after I get off work Thursday morning and hit Rural King for dog food and then Aldi (they open early for 'seniors' on Tue and Thu) for a few stock up items (I'd really like to know where my paper plates keep disappearing to...) Daughter has already done my Christmas shopping for me for the three boys; I've checked her credit card account and paid for the gifts as they hit the card. Now all I have to worry about is her gift; I will probably sneak in to her credit card account and pay something on her bill for their vacation as her gift.

Well, I'd better go get the younger one out of the tub so I can run the older one through the shower before I take them home. You folks all take care out there - stay safe!!

the professionals that do this sort of thing have people that pay in advance $$$$ - non-refundable - and are no-shows to the event >>> they purposely overbook by 20% figuring on the loss ....

Live and Learn! We cranked up our big wood heater, yesterday, too. Since it will be going all day, today, I had plans to make a big pot of Taco Soup to simmer on it all day. I got up this morning, and got everything ready. Browned a 2.5 lb. of ground beef/drained, chopped the onions, dumped in a can of corn, tomato sauce, whole canned tomatoes, can of red beans/rinsed, taco seasoning. Since I didn't want to take the time to dig around in the freezer for my frozen green bell peppers, I opened a jar of dehydrated ones I ordered from Walmart two weeks ago. I opened the jar and poured out a handful, and dumped them in. I mixed everything up, and noticed a tiny bug crawling around on the edge of the pot. I got it off. As I continued to stir, I noticed little black spots all in the soup. Immediately, I thought of the jar of green peppers I had just opened. Yep, you guessed it. BUGS! I just finished dumping the whole pot in the backyard, and washed all the dishes. I went through all my other jars of green peppers. They were fine.

This was a brand new jar of green bell peppers, still sealed, that wasn't even past the expiration date! Apparently, the seal had failed somewhere down the line. It must have been pin hole sized. I had just ordered them two weeks ago.

What a waste! Guess we'll have something else for our supper tonight.

Last night I tried canned Simple Truth organic northern beans, sauteed onions, some celery & just a bit of carrot dumped into pot. Added some chicken stock, salty ham bits and simmered............later on added some olive oil for fat and then a little butter for flavoring............salt and pepper.........YUCK.............the beans tasted tinny and ruined the whole mess....will toss it out today, but bummer........I bought a lot of canned beans......hope other brands won't turn out the same.........

Well the repair guy has came and went, we still don’t have a working fridge in the kitchen. Parts have been ordered and an appt. has been set up for NEXT Thursday, Dec. 10th. Don’t buy an LG.

We had our family Thanksgiving meal yesterday so there is plenty of leftovers for supper tonight. I cooked a ham instead of turkey and it was delicious, I take no credit since all I did was put in a dish, cover it with foil and bake. I didn’t even bother with a glaze. I’m tired out from all the cooking, baking and dish washing over Sat. and Sun. even though I had lots of help from my daughters.

We’re getting back on schedule today with the grandsons online schooling and taking care of sweet baby girl.

I really like to experiment with cooking/baking. You cannot expect every experiment to be a success.

I also baked a ham for Thanksgiving. I never use the packaged glaze. This ham came with a dry glaze. I was about to toss it but I read the ingredients first. It said sugar, brown sugar, honey powder, and spices. Got to thinking and opened the package. Smelled/tasted sweet with some cinnamon. So I added a little to my next batch of cornbread (I usually add some sugar and cinnamon anyway). Turned out fine! Taste was a little different but certainly not bad at all. I will gradually use it up in future batches. Don't like to waste anything.

Watching snowflakes fall - bleah... time to check the emergency bag in the car, fix a supply and food bag, and toss the sleeping bags into the van. I probably need to pop in to Dollar Tree for some new glow sticks - while the boys aren't here to snap them - the bigger one was trying to read under the covers by the light from a glow stick the other night - I gave him one of the dynamo flashlights instead :rolleyes: They both have those battery powered lights that look like light switches (Harbor Freight - at least they have useful stuff at the check out for the boys to ask for lol!) that they are allowed to use when they read in bed, but they frequently 'lose' them between the mattress and bed frame and can't remember to look there.

I asked daughter to go ahead and order Chrome books for the 2 little boys - that way, if they end up staying in Montana after the Christmas holidays, they will have them to use for their school work since that is what their school here is sending home for the kids who are doing the distance learning program rather than the in-school program that my boys are currently doing. At least we will be able to put protections on them that we can't with the ones from the school. Oldest grandson will turn 21 near the end of December; he will be able to have his father's firearms then, so there is likely little that he will need, but I'm going to get him a gift certificate to the local firearms emporium anyway.

I offered to take Hubby out for lunch at his favorite place today, but he didn't feel like leaving the farm - his birthday is over a week away, but between my work schedule and his, today was about the only day we could manage to both be off work and awake at the same time. Maybe I will pick up carry out from there some day between now and his birthday and call it good :lol:

Well, I hear my recliner calling me - reckon I'd better go see what it wants; it's going to get awful lonely when I go back to work tomorrow night...

The paperwork I need to fill out for my dad's death FINALLY started arriving. Won't get his death certificates until the end of the week (mailed from Texas--they are in though).

Dropped off 3 big boxes of food at the local Catholic Charities today. We have plenty to eat and there are those that don't. Consider those food boxes as part of our charitable giving. They were thankful. We have two more already started for December.

Made a quick trip to Walmart to get more generic Aleve, some propane, distilled water and the like. They were very well stocked today, except in paper good-1 type of paper towel and 2 types of toilet paper and low on those, but they did have them. Even had things like Clorox wipes, though I don't need any of those.

Question for you guys and gals......Today is our normal day to go to Sam's. It's so cold and bad out that we are thinking of just ordering from them online. We've ordered from them before. Thing is, I have never ordered cases of water or green tea. Those were on my list of things to buy today. Have any of you ordered cases of water from them, and had them arrive in good shape? I'm afraid that the bottles will get squished, and they will arrive in a royal mess. Fed Ex is who always delivers for us.

Do ya'll think I should take the chance, or just wait for a better opportunity to buy in person?

I'm not sure but some how I doubt they will deliver water, but I could be wrong.

Ok. Thanks, Judy. I've already decided against ordering it anyway. Will pick up some at a later date. I just placed my order with them a few minutes ago for everything else.

Sherree, the first time I ordered ginger ale and juice, it got here fine. The 2nd time, one of the ginger ale cans punctured and leaked all over everything. It was all canned goods that I could wash off. The last time, they demolished the box and sent it back without even delivering it to me. I quit ordering anything liquid after that. YMMV...

Ok, thanks. That's good to know. Your ordeal is why I was afraid to go ahead and order it online. I'm glad I changed my mind. I'll be out and about in our small rural community in a few days, and will pick up water and green tea at local Dollar General. We may even go tomorrow. Rain is moving back in Thursday.

Last night UPS delivered 3 packages to our mail box on a state highway instead of bringing them to the house. so I had to go into to town to talk to UPS about it. While I was in town I went to walmart, mainly to see how things were. It was not too crowded, there were holes on the shelves, but nothing drastic, although TP and PT sections were sparse. No limits on anything I could see. It all seemed normal.

I picked up a few things and most of what I was looking for was on the very top shelf, I could barely reach it. Some of these things are usually eye level.

God is good all the time.

DH brought home a box of ready to eat meals at one of those big warehouse stores to try out. Luckily it wasn't that expensive because the taste rated highly on the rest of the family's Yuck meter. DH said he'd eat them. Hope he's hungry.

For those getting started: before investing in any expensive long term bulk food storage. I'd strongly suggest trying the food out first. The terms: "easy to prepare" and "tastes great" can be very subjective.

Great advice for all! We don’t have a lot of long term food storage (like MREs, etc) but do have lots of pantry staples that I rotate. We try to stock what we eat and build from there.

I got an unexpected blessing of cash this week so I'm trying to decide where to spend it. I've already bought more dog food, it should be here Friday. I'm trying to decide whether to add more canned goods or get the shock collar the trainer recommends for Rufus so we can start off leash work. I'm leaning towards the collar but......
It's a busy rest of the week for me. Training class for Rufus later today then home to finally change out my winter/summer clothes. Tomorrow I'm going to see my sister. She's having such a rough time emotionally right now. I hate that we live an hour apart. Then Friday I have an appt at the dmv, NOT looking forward to that!
After the DMV I need to do the regular grocery shopping too. Oh and ds has his drivers ed class Saturday....on zoom. He's hoping to get his license this year. It will be a help in that I can send him to the store for things. He won't be able to drive at night though for another year. So another winter and a half of taking him to tkd classes and waiting.

We decided to play it safe and cheap this go around with our bi-monthly grocery run. We have a Dollar General about 2 miles from our house. Very rural. I went there, and bought everything I needed that was on my list and some extra for storage. The store was fully stocked, and they were still stocking the shelves. Only two other people in the whole store, besides the cashier. My kinda shopping! It sure saved us a ton of money, time, gas, and a crowd. We plan to do this on a regular basis from now on. I did purchase a few items online from Sam's.

We only plan to do one more shopping run, before Christmas. I will venture to Sam's at that time to stock up for my Mom's year supply on certain items/food. This is always my Christmas gift to her each year. I love doing this for her, and it really helps her out. She very much appreciates it.

We got a couple of boxes of mre's lately, one after hurricane laura and the other in commodities in November. Two entirely different kinds of food in the two boxes. The one from commodities are things like soft cans of tuna and such with crackers. These would be good to keep in a BOB, or truck bag. The other bag was the regular mres and the food was disgusting. I repacked all of it in buckets, just in case.

I got 2 early Christmas presents of cash, so I went to Bass Pro and bought myself a new coat and some beanies to replace the ones that shrunk. The coat I wanted had an outer fleece shell, but I knew it would never survive the cockle burrs and carnivorous plants on the farm, so I picked another one.
Finally managed to get the stove pipe that we replaced and all the recyclable glass I rescued from relative's apt. hauled to the recycle center. I tend to be a bit of a tree hugger, I don't believe in throwing away glass.
I'm with OGM, I won't volunteer for anything again. Relative thoroughly stressed out dh and me over moving. He did give dh a big box of every kind of electrical cord made, which made hubby happy. And he gave me a cell phone charger for the car, I didn't have one.

Stopped by Dollar General to use a few of their in app coupons--bought a 5 lb bag of flour, a 4 lb bag of sugar, a bottle of veggie oil, and a 2 lb bag of light brown sugar. Also got 15% off a Subway giftcard I bought as a gift. I also bought 3 packages of these little styrofoam trays--30 in a package at $1 a package. I have a ton of paper plates, but I liked these, so I got them as well.

Not planning on doing much for a week or two. Lots of packages coming in for things I ordered. Plan to hit Sam's next week for a few things like more butane and fire logs. But for now I am just enjoying the cooler weather :)

Oh my. Where to start? When I started my pantry, I had a grocery store in mind. I have foods divided in sections. Spices in one place, canned veggies, can milk, canned meats, sauces, oils, pastas, peanut butter, jelly, mayo, mustard, syrup, cans of Cream of "whatever",etc., everything in it's own section. It really does look like a small grocery store. I plan the night's meal early in the morning as one of my chores. I walk into the pantry room, and gather everything I need to make what I want. It really pays to have a large variety of foods to work with. When eating solely out of your pantry, you don't want to get food fatigue from eating the same few meals over and over. I still buy fresh produce and fruit on a regular basis.

I cook mostly from scratch, and store only what we eat on a regular basis. I have nothing stored that are "we might eat this in an emergency" situation only. Those type of foods waste too much room, and truthfully, they probably will never be eaten. I do have several cases of the long term foods/meals from Safecastle, though. I also have two freezers for meat, cheeses, and butter.

As to things we eat out of storage.....Spaghetti and meat sauce from scratch, all types of one pot meals, such as Cajun red beans and rice with smoked sausages, Cajun dirty rice using ground beef, smoked sausages with kraut, dry beans with smoked ham, etc. Then, there are all kinds of casseroles, such as tuna noodle, chicken/veggie noodle, smoked ham with potatoes, several ground beef casserole recipes, etc. I also make a lot of skillet meals such as Hamburger Helper, and Hamburger/Tuna/Chicken Helper-like recipes using rice or different types of pastas. I also use different packaged items like Mac and Cheese, Spanish rice, Cajun yellow rice, etc., for side dishes. Different soups and stews from scratch. I like making Breakfast for supper type meals. Lots and lots of bacon in the freezer. I could go on and on, but you get the idea.

If there is a single recipe you have in mind, I'll post it. Since I have such a large variety, I can't pick just one. If you need more specifics, I'll add those, too.

As an example of a meal. Tonight's supper will be smoked sausages and kraut, my own canned southern peas (purple hull), steamed potatoes with butter, and cornbread. Everything taken from storage, except for the potatoes which I buy every two weeks.

We need new kitchen chairs. Mine were taken from my dad's barn over 30 years ago. I have no idea how old they were before I got them. But the joints are loose and they need new paint. We could work on them, but we would rather just get some that we just carry in the door and put to the table. So far, no luck. But while at the family owned furniture store we buy most of our items, we decided to look at mattresses. Ours is in terrible shape. I thought we must have had it several years as bad as it is. Our sales lady looked it up. It is only 4 years old. Sent a guy out to look at it and we are getting a new mattress under warranty. We will be getting a different kind, a hybrid this time. They will give us a full refund and we start over. It pays to shop where there is old fashioned customer service.

I canned 9 pints of Turkey broth, a little cranberry sauce, and a couple of jars of cuties to try. I have been told to let the cuties sit for a week or 2 before trying them. That is the hard part. I would can more if we knew we liked them.

I ordered seeds from Bakers Creek this morning. I can usually get a couple of the seed locally a bit cheaper. But I am not taking the chance on waiting. Bakers Creek already had out of stock notices on some varieties.
