Problem arises with paying for them, out of their now reduced revenue stream (every OTHER table cannot be occupied - HALF the number of paying customers).I was thinking that restaurants, at least in some areas, may need to hire bouncers.

Restaurants and other business owners pay the local political authorities in the form of licensing, taxes, other required payouts, in return for a safe and protected business environment - with capable and willing LEO only moments away, should they be needed.
THIS is not happening in some jurisdictions - and business owners are left to their own devices for a solution.
Funny thing is - the offending local jurisdictions have NOT stopped collecting their "taxes, tags, title" revenues, maintaining an expectation that the business owners will pay in full, as per usual - the local jurisdictions WANT that money coming in from the business owners, want to continue to pay their OWN FULL paychecks, but have reneged on THEIR part of the business deal - no LEO support for the still paying business owners.
There is another set of lawsuits just waiting in the middle of all of this malarky.
