I have been reading a lot of research reports lately, and I think Fermented food like sauerkraut& kimchee & other fermented food play a much more important part of keeping us healthy than anyone thought. I rarely eat kraut but i think im gonna start having it at least once a month with sausages or hot dogs.

Baby, do I have some ideas for you!! I *love* kimchi and kraut. My brother was stationed in Korea and his girlfriend taught me how to make old school kimchi (bless her soul, she was one of my favorite girlfriends!).
Anytime I have a microwave fried rice or ramen (if you can find it, the nissin spicy garlic cup noodle is AMAZING!) I always add in a few spoonfuls of kimchi after heating. And a few tablespoons of, preferably Sambal Oelek, but since that’s in short supply, I use sriracha. Basically any kind of stir fry type thing is complimented with kimchi. Even just plain rice, add your kimchi. SO GOOD!!
I have a gutter palate, and LOVE hot dogs. My favorite way to eat them is with kraut, grilled onions, and spicy mustard. My husband thinks it’s disgusting (the SWINE) but has been known to buy me my own container of kraut for camping trips when he knows hot dogs are on the menu.
My favorite way to have pork chops is to butterfly the chop (well, I create more of a pocket), salt and pepper generously inside and out, stuff with kraut, more pepper (not salt) and bake with zucchini, squash, mushrooms, and red onions.
Anything pickled counts, though. Regular pickles, pickled okra, pickled green beans, carrots, Oh Snap! has a great assortment.
