Hit me with your favorite shrimp scampi recipes please!
what did you serve it with?Here's one I used recently:
1/2 cup unsalted butter, cubed
4 cloves garlic, minced
1 medium shallot, minced
1/4 teaspoon crushed red pepper flakes
1 1/2 pounds medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
3 tablespoons chopped fresh parsley leaves
1 tablespoon freshly squeezed lemon juice
2 teaspoons lemon zest
Melt butter in a large skillet over medium heat. Add garlic, shallot and red pepper flakes, and cook, stirring frequently, until fragrant, about 2 minutes.
Add shrimp; season with salt and pepper, to taste. Cook, stirring occasionally, until pink and cooked through, about 3-4 minutes.
Stir in parsley, lemon juice and lemon zest.
Sounds good.Not shrimp scampi but really good.
Cook 1 pound spaghetti noodles
while cooking noodles, thaw and peel 2 pounds shrimp under warm water
Melt 2 sticks of butter in large skillet.
Pour in some olive oil
Add about half a cup of white wine
Add a fair amount of dried minced garlic.
Add shrimp and heat until done
Add Parmesan cheese or sharp Parmesan / reggiano cheese to taste.
Once cheese is mostly melted add warm cooked spaghetti
Mix, Serve, top with more cheese. Add parsley fresh or dried and more Parmesan cheese to top.
I do not measure anything. I just add until it seems right. Can add tomatoes, basil, fresh parsley or any fresh vegetable like zucchini, or asparagus. Use more or less butter or olive oil to taste. Can add heavy cream or half and half. Can add some salt and pepper to taste.
