Yum! We make "armadillo eggs" Which is an Anaheim pepper cut lengthwise, stuffed with cream cheese, shredded cheese and "lil smokies" lengthwise, then wrapped in Bacon (gotta par-fry the bacon mostly done.. pretty much cooked, but loose) then wrap the peppers and bake or grill. Mmmmmmm. Reckon sausage would be good in the middle too but then you have to FOR SURE get it to 150F.
