Recipe Requested....Hawaiian Bread

Nomifyle ask me to post my recipe for my Hawaiian or Aloha Bread. Here goes.

2 sticks of butter, or 1 cup, softened
2 cups of sugar
4 eggs, stirred
1 ripe banana, well mashed
4 cups self-rising flour
1 can 15 1/2 oz crushed pineapple, undrained
1 cup shredded sweetened coconut
1/2 cup chopped pecan or walnuts

Preheat oven to 350*. Lightly spray with oil and flour 2 9x5 loaf pans.

In a medium size mixing bowl, cream butter and sugar until light and fluffy. Mix in eggs well. Stir in mashed banana. Gradually add in flour, one cup at a time, mixing well after each cup. If batter begins to get too dry, only use 3 1/2 cups of flour. Fold in undrained pineapple, coconut, and nuts. Blend well. Pour into prepared pans. Bake for 1 hour, or until toothpick comes out clean in center of loaves.

If using All Purpose flour, add 2 tsp baking powder, 1 tsp baking soda, and 3/4 tsp salt to flour and sift together, before adding to mixture.

I think I could do this except I don't have self rising flour, so I'll add the baking powder. Thanks.

I've made it with both self-rising and all purpose flour. I couldn't tell the difference. Just make sure you add all the other ingredients when using the all purpose flour. Mix them all together with the flour, before adding the flour to the mixture.

yes mam, and I still have a sifter. I lost the one I'd had for years and years in Katrina, but got another one, so I'm good to go on that.
