This shortbread is awesome... thanks to my hubby for sharing it.

Apparently this shortbread freezes well, but personally I haven't seen it last long enough...

Melt In Your Mouth Shortbread

1 Lb butter - creamed
2 tsp vanilla
1 1/8 cup icing sugar
4 cups flour (gradual, in 2 steps)

Cream butter with electric mixer, add vanilla. Slowly add icing sugar.

Gradually blend in flour until it forms a stiff dough.

Turn dough out onto a floured surface, and continue kneading flour into dough only* until it starts to crack. (when you make a ball and push on it, cracks appear around the edges). You likely won't need the whole 4 cups of flour. It depends on humidity levels, dryness of flour, etc.

Roll to 1/4 inch thickness, use cookie cutter. Decorate if desired.

Bake on cookie sheet, at 310, until just starting to turn light golden brown around the edges (about 25 min.)

* Too much flour = dry and tasteless
* Not enough flour = flat and greasy

Variations:

1) Make small balls from the prepared dough, roll in egg, roll through crushed walnuts, and bake.

2) May add small pieces of cherry or nuts to the dough before baking.

I love shortbread but have never made my own. Is icing sugar just like superfine confectioner's sugar? I have been looking for a treat for my students on Christmas Eve...this might be just the thing! Thanks for sharing it!

Hi Migraine,

No; you can buy "icing sugar" at the grocery store - it is a white *powder*, as fine as a baby powder (you would use icing sugar to "dust" cookies et al.)

Hope this helps :)

Hmmm...that sounds like confectioner's sugar.

If I can't find icing sugar, I'll pick up a pack of confectioner's sugar and let you know how it works! Thanks again.
