[REC] Chicken Avacado Roll-Ups

2 boneless chicken breasts or thighs, cut into bite-sized pieces
2 medium flour tortillas
1 small onion
1 ripe avacado
1 large or 2 small ripe roma tomatoes, diced
grated 3-cheese mix or grated cojack cheese
lemon juice
extra virgin olive oil
tamari (a light soy sauce)
pepper

- Wrap tortillas in foil and put directly on oven rack. Set oven for 'warm' or about 175°.

- Coat chicken with tamari & sprinkle with pepper.

- Peel & mash avacado, adding a little lemon juice.

- Brown onions in a skillet over low-medium heat with a lot of olive oil until carmelized (well-browned).

- Move onions to outer edge of pan, clearing a space in the middle. Put the chicken in the middle of the pan and cook through until it turns white.

- Mix chicken, onions and add tomato, cover and remove from heat.

- Remove softened tortillas from oven. Lay out a tortilla on the plate you're going to eat on. Sprinkle tortilla with a generous layer of grated cheese. Spread half the cooked mixture over the cheese. Top with half the mashed avacado and roll up. Repeat with the second tortilla and the rest of the mixture.

This is enough for one very hungry person or two people with a side dish. This is a very rich, delicious dish.
