OT/MISC Quilt Squares or just "What's for Dinner?" November 27th, 2021

Happy First Sunday of Advent! Hope everyone is well and happy.

The house is decorated, and the turkey soup is simmering, making the house smell heavenly. Even with all of the shortages of foods and presents out there, I am excited. One thing that I thrive on is a genuine incentive and this is it. My creative juices are going crazy. I am finding great ideas for presents this year and Christmas menus. For me this is the silver lining of our current situation in the world. Just like so many here on TB2K, I love the old Yankee Credo: Make due with what you have! :D

Dinner will be Turkey soup with cheese tortellini, and garlic bread.

How about you? Build a quilt square or just "What's for Dinner?"

Made the chicken soup yesterday so having leftovers for lunch. Going to order out tonight. Maybe spaghetti or lasagna.
Not feeling that great. Humidity is non existent and lack of playing havoc with my nose. Day is pretty to look at and fairly warm out.

The last of our holiday guests left this morning, the house seems very empty. I packed away the Thanksgiving decorations and am not motivated to put up Christmas decorations. I told DH that I was thinking I'd probably not put up a Christmas tree, for the first time ever. I'm just not feeling any Christmas spirit this year. I'd skip the holidays completely if I could get away with it.

Thanksgiving was at oldest DD's house and she sent us home with some leftover turkey so dinner tonight is going to be turkey a la king.

We are still eating Thanksgiving leftovers tonight. They should be pretty much gone after today.

DH decorated most of the outside of the house. I'll get pictures later. We won't be doing too much decorating inside because of:

I don't want to try to puppy-proof for 9 puppies. LOL Today it has been puppy snuggles all around. :)

Something must be in the air. I'm not feeling too hot either. Kind of a cold or something.

I simmered the turkey carcass today and got a gallon and a half of broth in the freezer for noodles later.

Still have turkey breast, dressing, veggies, cranberries and gravy in the fridge....probably nuke some of that later.

Don't forget this is Yellowstone day!!

They are absolutely adorable! How old are they?

My kid gave me leftovers of her postponed Thanksgiving dinner last night so I'm not going to do this tonight, but I've been thinking how, as a single person now, I never get some of my favorite dishes that I made when we ate as a family. LIKE MEAT LOAF.

I thought about it and almost forgot I had come up with a meatloaf PATTIE when my DH wanted meatloaf, but it was too late in the day to bake a whole meatloaf. I had forgotten about it!

Just put everything in the pattie that you put in the whole meatloaf, but less, add a very little water to make steam and simmer it covered for about 10-15 minutes, flip it over and simmer it on the other side for 10- 15 minutes! You can't tell the difference! One precaution, you will find yourself wanting "another slice" of that "meatloaf" and if you didn't make two slices to begin with you are gonna be on the "wished I'da" done different team.

Tonight we had spaghetti. There's still a little turkey left, the ham is already gone. Think we got the right amounts of ham and turkey to fix-some leftovers but not a crazy amount.
Was going to purchase the car today that the missus found for sale last week. Had the cash the lady couldn't find the title. So we'll wait until she does have it then make the buy. The car is officially off the market though, so it's ours. When she finds the title.
The "new" car is a 1997 Toyota Camry LE, 145K miles, automatic. Drives beautifully, AC even works. It's dirty, needs tires. Maybe a left front CV axle, a bulb or two, maybe a drivers side door lock actuator. But engine trans are perfect; body has it's little dents here and there. I'm paying 600 bucks cash for it :). Going to be a nice spare car to have around. Either that or fix it and resell it. Haven't decided yet, but can't pass up a deal like that. Wife did the finagle the price down part-original sell price was $ 1000, wife negotiated it down with the lady seller. She did a good job.

Ugh, back to work tomorrow after a really nice 4 day weekend. Hope everyone has a great week!

I’ve made mini meat loaves in those disposable tin foil bread pans. They freeze really well.

i would pay you 9$ just to get in there and smooch em all....... now I expect the money to be put towards their college fund.....cute little shits....!!!! thanks for the pic

DD had a huuuge Thanksgiving potluck--me and her DH's extended family. Collected my portion of the leftovers today--turkey, gluten-free stuffing, homemade cranberry sauce, green chili, and enchiladas. I'm set for the week.

I'll do a tiny bit of decorating this year. No tree, but several folk pieces and nativities. New this year:

We are done with leftovers except for some Pumpkin roll, Italian cream cake and cranberry salad. Leftover turkey has been frozen for a pot pie and soup, the carcass turned into 5 quarts and 1 pint of turkey stock that I pressure canned.

Today we were all were tired from the past week and weekend so we made chicken quesadilla’s with home canned chicken.

We went to my brother’s house for Thanksgiving on Thursday. They wanted to pack up leftovers for us, but my mom was in so much pain from her arthritis that we said we just had to go. Not upset about not getting leftovers because the turkey was a little dry. My brother bought an organic turkey, stuffed it with herbs, citrus, onion, celery and garlic. He cooked it on the grill and basted it with a brush made out of fresh Rosemary. But sadly it was overcooked. Today I made chicken and vegetable soup and also cornbread in the cast iron skillet. I bought a rotisserie chicken to shred and put in the soup because it’s convenient, but unfortunately it was dryer than the Thanksgiving turkey. Thankfully I also bought some chicken sausage at the store and used that instead. I drug my 13 year old daughter unwillingly out this afternoon to pick out a tree. This is the latest I’ve ever gone. But I’m just starting to feel better after the pneumonia. We went to 5 different tree stands before we found one. We got it in the stand and will wait until tomorrow to decorate it.

I didn't have a good weekend. Yesterday was official 1st anniversary of losing DH. I moped around except for the football game yesterday. At least that was a small distraction for a few hours. Today I'm still in the dumps so all I made was a grilled cheese sandwich with tomato soup. It's been a bit since I've had canned soup. I had forgotten how salty it was.

Today I'm still in the dumps so all I made was a grilled cheese sandwich with tomato soup. It's been a bit since I've had canned soup. I had forgotten how salty it was.

I’ve made mini meat loaves in those disposable tin foil bread pans. They freeze really well.
Muffin tins work great for individual servings; I use the jumbo muffin tins as we are big meat-eaters. Let them cool down before you try to take them out, then run a plastic knife around the sides to loosen them up (use plastic so you don't scratch the metal surface). Put them in ziploc freezer bags and stick them in the freezer. Reheat on defrost until they're hot enough to your liking. I did this for years when I was working and worked out great. We all like the crunchy side parts, and with the round shape, there's plenty of that.

Mini-muffin tins also work great if you're making a bunch of meatballs ahead of time to stick in the freezer. Use a cookie dough scoop (I have two sizes and use the slightly bigger one). Bake until browned, let cool, remove from pan then bag and freeze. When you make sauce, get the sauce about halfway done then pop in the meatballs to finish off.


We pretty much finished off the Thanksgiving leftovers today. Still have some homemade cranberry sauce and there's still some turkey. Will freeze that and eat later.
