OT/MISC Quilt Squares or just "What's for Dinner?" January 9th, 2021

Hello, All! Hope it's been a good week for you.

It's been crazy busy here in Seabirdland: lots to do, no where near the time to get them done. Prepping for six weeks of lesson plans as I will not be able to work for that time. I have been sick and will be having surgery this week. Making lessons plans for six weeks is not easy. :lol: Plus trying to get the house set up for my being out of commission for that time. I stocked up on easy meals, am making a new vat of pasta sauce, and doing laundry, extra cleaning, etc.

Dinner will be Cheese ravioli with meatballs, fresh sauce, and red wine.

How about you? Share a quilt square, or just, "What's for dinner?"

It's a beautiful day today--unexpected, as it was icky yesterday--so Husband will grill chicken. I'm not sure what we'll have with it. Either bulgur wheat or flour tortillas with a bit of gravy, and a salad. We still are inundated with tomatoes, having just had our first real frost just a bit ago (and Husband picked a huge box full of green tomatoes, which we wrapped in newspaper and put back in the box because we have several containers of tomatoes already waiting. I have bok choi and lettuce from the garden as well.

Earlier I made egg salad. Wanted to pack hubby's lunch with something beside lunch meat sandwiches for work. Somehow a chocolate cake with fudge icing happened also. :-) Dinner will be steak for the guys, acorn squash for me, along with baked potatoes, mac n cheese, and freezer corn from last summer. Guess you know what's for desert. Yum!

Cold and windy (but sunny!) today. The high isn't going to get above about -2F.

It's cook in the oven, "clean out the fridge" and "use up stuff" day. Mixed up a spinach/mushroom/bacon/cheese crustless quiche in one big cast iron frying pan for the oven, and had a bunch of apples getting soft, so instead of going to the putz of coring, peeling and slicing for a crumble, only cored them, and set them in another cast iron pan stuffed with butter, brown sugar and cinnamon for baked apples.

I'd forgotten how good oven-baked apples are. That apple-flavored syrup at the bottom of the pan is heavenly spooned back over the top, then of course, whipping cream. So easy...Grandma was no fool to make baked apples a staple of her table.

Cool but sunny today. We went browsing at an antique mall this morning and stopped at a nearby Walmart Marketplace to get a couple of their $4 salads that we like to take home for lunch but there weren't any. In fact their produce section has been scaled back and had a lot of empty spots.

Dinner is going to be a sheet pan dinner of roasted seasoned green beans and chicken breast with chopped kale salad.

Been working outside all day. Snow has melted and it’s in the 50s here in upper Northern California. I’m having pork chops with broccoli and carrots from my winter garden. Will make egg salad for lunch tomorrow. The girls (my chickens) laid me a dozen eggs today so I better use ‘em!

It's 73F and sunny right now. Supper is chicken salad with Trader Joe's Crispy Onion Chips* on the side. A couple of fresh oranges just cut from the tree are dessert.

*These are actual onion chips, not onion-flavored potato chips. Bet they're great with tuna salad!

Today in our part of the DC area it's been cold and raining/sleeting since early this morning.

Tbear started the day off by going out the patio door after I'd walked him; it was a doggie jail break. He ran for over 20 minutes with me trying to catch him-in the rain and he's running like a sprinter looking back laughing at me daring me to catch him. I literally chased him from one end of the park behind the house to the other. Wore my butt out! Finally caught him; to him it was a great game.

Church was cancelled due to the threat of bad weather, so we got some errands done. Mailed off some stuff for the missus, went and got a haircut/beard trim (the shop was empty the entire time we were there). They're usually packed (best haircut in the DC area, a Vietnamese America run business. They love America and I'm happy to give them the business). Threat of freezing rain kept everyone away I guess. Lady gave me a movie star quality haircut and beard trim for 30 bucks. Best part is the end-a warm towel and a scalp massage. Lady almost put me to sleep!
Went and got some candles and those fragrance diffuser thingies at Bath and Body works; then went to Walmart to pick up a few things. Lots of empty shelves!

Dinner tonight is what I'd call "free range grazing". Graze through the fridge and if it looks good grab it. Good way to get rid of leftovers and pretty tasty too. TBear likes to graze too-more variety for him.

I made a Parmesan chicken pasta casserole at the request of my son. It’s super easy and something that both of my kids will eat. I shred a rotisserie chicken and mix with rotini pasta, tomato sauce and cheese. It’s topped with more cheese and breadcrumbs. So easy. I made garlic bread to go with it.

Seasoned white beans with diced andouille and onions. Big skillet of corn bread as a side. Tired, had to work today… lots of call outs and equipment break downs in truly “sucky“ weather … went from one end of the state to the other.

I am in a weird eating frame of mind lately. Tonight it was a sweet potato cut up into fries and baked with olive oil, garlic powder and salt. A handful of toasted, salted pecans. Two mozzarella string cheese sticks. Two chocolate covered nutter butter peanut butter sandwich cookies and a can of Zevia brand Cola. 'Twas strange, but tasty.

Hubs made one of our favorites, shrimp and clam scampi. Sides were black olives, green olives, and mild pepper rings. Accompanied with a nice chardonnay. Dessert is homemade snowballs.

when I was in basic training at Ft Polk way back in the mid 70's my drill sergeant asked me if I could drive a tractor.
I told him yes and he asked if I would be willing to do some farm work for a family that he knew in exchange for a home cooked meal--that was a no brainer
he told me not to get my expectations too high because the family didn't have much.
So I drove a tractor plowing a field for about 5 hours and in return had supper that was a big stone bowl of beans with some pork meat--cornbread and onion
The best meal that I had in all of basic and AIT
listening to the cajuns talk around the table was worth the time--I almost needed an interpreter at times
I love beans and cornbread with onion

I toyed with making “cheater” crawfish bisque… was too tired to dig in freezer for the crawfish tails… my day started out w phone call at 5am l tying me one of my managers was in jail and it quickly and steadily went downhill from there ... lol. Pulled back up to house around 6pm n took the path of least resistance.. beans already cooked so only had to make cornbread.

They told me there were warrants out on them inFlorida and they were “expediting” them there … I almost laughed, almost, but really wanted to cry. I’m pretty sure they meant “extraditing” which means I’ll be stuck running up there every day or two and since the Florida warrants were for grand larceny I’m having to do a detailed, in depth audit on-top of everything else… another day in the life…sorry didn’t mean to whine

Truly love my south LA people.. just don’t ever cheat at “Boo-ray” or do them dirt… they’ll give you their last dollar, the shirt off their backs and feed you up something special.

Big pot of chicken noodle soup is on for tonight's supper. DH and I are still on the sick list so soup is the easy thing especially since I did packets of veg to add to the pot when he brought home half the produce dept last time I sent him for celery. I sorted the processed veggies into packets sized for one batch of soup. Turned out tasty. Since I can still taste, I assume that we don't have the rona.

Good Cajun name… I’m sure they were Cajun, just not sure they were born and raised around Fort Polk … lol. They did migrate up some but mostly west is what I think. When the oil patch kicked off they worked on drilling and production rigs… worked hard enough to move up the ladder and make friends while doing so. A lot moved to Texas w service companies, drilling companies, etc. like I said we get around… I bet those beans n bread were awesome

Chicken noodle soup made with Amish noodles and Sam's Club roasted chicken! Not low carb but since we have covid kid in the house, they requested it. My wife's is the best!

Whole Italian fennel sausage sautéed with onion and orange bell pepper over fettuccine noodles drizzled with extra virgin olive oil
