Potatos going bad--what can I do with them?

I have a bunch of potatoes that are going bad. I don't want to just toss them, so what can I do with them? I can't do anything like twice baked, because there's too many bad spots to cut out.

I have plenty of freezer space, but I've never heard of freezing potatoes.

Potatoes can be frozen -- take a look in the frozen food department at the grocery store. There are a lot of potato products there. You could also cook them up, make a big batch of mashed potatoes, and freeze that in meal-size portions. Could probably spread the mashed potatoes out in thin layers in a food dehydrator and dry them, too.

Personally, if they are that bad, I'd probably chuck them in the compost pile. Depends on how hungry you are!

We like to mash them up, mix in a bit of onion and shredded cheese, put serving size mounds on wax paper, and freeze. Then dump them into freezer bags till used. Heat and brown in the oven.

I'd do a big lot of potato pancakes precooked and frozen.
Depending on how many potatoes you have as well.
I use to do this and they sure are handy for either breakfasts or any meal.

I'll write my method not meaning of course you don't have your own preferred way

Peel and prep potatoes and I run them through my food processor on the grater thing
Rinse them really well and get all the starch out. Squeeze them as dry as possible and let dry
I put the blade in the food processor and whiz up onion then mix it in with the potato. Add egg mix then add flour till it is the right texture. I fry them till done but not brown lay them out on a cookie sheet freeze them then bag them and make sure all the air is out of the bag.
When you want to use them take them from the freezer fry them till brown and enjoy. :)

Make a huge batch of potato pancakes:

Peel potatos. cube and whiz in blender till finely grated. Add onion if desired. add enough flour to take up potato water. salt and pepper to taste. Fry in drawn butter (ghee) till brown and crispy. Serve with applesauce or sour cream. Wonderful with sausage and sauerkraut.

You may be able to prefry till set but not brown then lay on cookie sheet and freeze individual pancakes if you have too many potatos for a single meal. My family of 8 could eat a 10# bag of taters this way if I let them.

BTW, this is DH's grandmother's recipe from her mother in Poland. Grandma Sugalski was born in 1895.

You can also do french fries and freeze them. Peel and slice as usual, pre-fry them till they're about half done, drain on brown paper and freeze. Use them like store bought frozen french fries; either bake or fry them.

Personally, especially if you're dealing with a lot of bad spots on the potatoes, I'd just peel and cube and can them.

Have you thought about canning them? My husband and I used to have a concession stand that used potatoes. We bought them in 50 pound bags. At the end of the season we would have quite a few left and I usually canned as many as I could. They are great in the winter when you need a quick meal. I just opened a can into a skillet, sliced and then quickly "fried" them in a little butter and they were great. They can also be used in stews, etc.

When they sprout, I plant them.

I love those other ideas too and the recipes...yum~

We either boil them or throw them on the grill when we're cooking other things, then feed them to our hogs. Of course, that doesn't work if you don't have hogs. Maybe you should get a hog? ;)
