Pickled Eggs

Could someone please post a good recipe for making pickled egg?

I have a lot of eggs right now, and thought this would be a good way to use them.

I love pickled eggs. Here is what I've done in the past.

I had a bunch of pickled beets. Whenever we'd use up a can of them we would just put the peeled eggs into the beet juice and refridgerate. If they needed a bit more vinegar then add it too. Very good this way. Quite spicy.

I dug around in the family and found a recipe for a friend last year, but I have no idea what I did with it after that. I'll look tonight and see if its findable!! Maybe someone else will have it handy :D

Do you ever freeze your extra eggs? Someone told me to take an old ice tray and break an egg into each hole then poke it with a fork and freeze. After frozen empty into a heavy freezer bag and you can pull out one at a time for cakes etc.. I just wonder how well they work after freezing.

I've dropped egges into leftover pickle juice. They come out green but still tasted pretty darn good. Of course tasted like pickles rather rather pickled red beets. Try it and get extra for your buck.

Yeah, pickled eggs be good! I buy Whitfield pickles by the gallon at Sam's and re-use the pickle juice for pickled eggs after all the pickles are gone. Just add a little more vinegar and maybe a pinch of dill weed and a handful of garlic cloves. And hot peppers if you like a little spice. Poke each boiled egg with a fork and drop them in. Let them sit in a fridge for at least a month before trying one. I really like pickled eggs in potato salad. And chicken salad. And ham salad. And tuna salad. Heck, they're good in any kind of salad! I love pickled eggs!

I use jalapeno juice from canned peppers and a bit of worcheshire sauce some garlic, onion and black pepper. I like it. Have some in jars I pickled last year I'm gonna open and see if they kill me or not. :D

I don't prick my eggs with a fork and I usually eat them in about 5 days....Interesting how we all tweak things just a wee bit different!

Okay. Now I will have to make a batch of pickling brine like I do for the beets. Boil a bunch of eggs and combine. Wait maybe 24 hours if I can and then pig out.

Finally had the time to fix them today. I bought some beets so they would be the requisite red color. Since my hens are giving me so much bounty I made around twenty-plus.

Now to deal with all those tomatoes and potatoes...

A guy I know makes his own pickled eggs, and he adds half of a habanero pepper, plucked from his own plants, deseeded and pureed into mush, for a little zing.
