Went to Krogers a couple hours ago and had just a couple minutes with the man. He said none of the stores can get cottage hams anymore because China has bought access to all of them.

We knew it was happening so this is just another confirmation. He also said to buy your next couple Christmas hams now, and that goetta goes next.

So, who has a really good goetta recipe? And please don't refer to the one on the back of the pinhead oatmeal box cause it's NOT good.

Goetta is a new term to me. Esplain? As far as meat in general, I think it will be pretty spotty, or worse, just based upon what I’m seeing now. I don’t know the why. Just less meat than I’ve ever seen in the meat cases.

So are you saying that there is a shortage of pork shoulders because that is what I thought a cottage ham is

I know when I make homemade smoked bacon I always use butts because its leaner as well as cheaper to buy. And I use shoulders and butts on the smoker when I make bbq. So a shoulder shortage impacts my cooking plans

Just my area, but fewest pork shoulders I’ve ever seen in the meat case. Talking a handful or none anytime I’ve been lately. Snagged a small one last trip and intending to smoke it Sunday.

Those two items are extremely region-specific. Best to find a small family meat market that does them up for the locals and not rely on a big chain grocery store. The ingredients aren't exotic as far as the meat goes, (like most ethnic holiday foods ...it's mostly scraps or inexpensive cuts). It's the custom prep that makes them special.

Thankfully, we normally have lasagna for Christmas. It's what everyone likes and expects (my daughter makes a mean sausage/ground beef lasagna).
To each his own of coarse... Our family has enjoyed various "unorthodox" meals including taco bar, Chinese buffet, seafood and Mediterranean style dinners to change things up from time to time. Might help later this year if one were having trouble with traditional fixings for holidays. It has earned compliments from family members and it's been fun to do. We love lasagna here, too.
Just a thought.

Owner typically has a ham (usually from Vermont), a Turkey, or even a Roast Beef at Christmas.

Thanksgiving is normally a Turkey - although Owner keeps making noises about the family SHOULD be eating Lobster - because that's what the Pilgrims had available at their first Thanksgiving.

Meh. I hope he leaves a cup of his "rum-nog" on the post.

I can do "Fireball" in the small "nip" size bottles if someone undoes the cap.

I definitely feel that one going down the whole way...

Not sure how you're going to get mutton from a goat as at least in my ao you get mutton from sheep

Cottage ham Is cut from the top of the pork shoulder. It's a smaller cut, hence the name, that's cooked with hickory smoke. It's a deep red color compared to a regular ham.

Goetta (pronounced 'getta') is a mixture of ground beef, ground pork, onion, pinhead oats and spices, cooked in a big pot and poured into loaf pans to set. When cool, it's cut into slices, fried in butter and drizzled with maple syrup. There's nothing flavor wise I can compare and describe. But it's the bomb!

Noooo not the goetta! I love that stuff. The trick is to keep it really thin and make it really crispy :D

But why? Did the chinks buy Glier's too?

Try bacon wrapped lasagna. God knows Grandma D would've disinherited me had I made it while she was alive. It was the hit of my workplace a couple of times and not that much trouble to make.

So... another shortage problem is pool chlorine tablets. Haven't been able to get them all summer, had to use liquid, and it just doesn't work as well. My pool is now green. :mad:
