We had a ham bone leftover, so I made a big pot of pinto beans with it, and a pan of cornbread in my great-grandmother's 100+ year old iron skillet (only used for cornbread).

I'll be snoozing shortly.
A woman after my own heart! We also had cornbread and ”soup beans” today….cooked with leftover ham….along with fried potatoes and onions. Yum! Rainy and dreary all day, so vegetated in front of the tv watching the Browns and then the Cavs both win. Was a good day! Have a wonderful week everyone!

As expected (and planned for), we've made good headway with the Thanksgiving leftovers and after this afternoon/evening's graze-fest we are down to mostly just heaping spoonfuls of the sweet potato casserole, green bean casserole, dressing, and just dabs of orange-cranberry sauce and gravy. Those delicacies will likely end up as a creative sandwich made with the remaining dinner rolls for DH's midnight snack. Mind you, there are only three of us, but I'm under strict orders to cook large quantities because "Thanksgiving just isn't right!" unless there are leftovers to last through the holiday weekend. There is enough turkey put back to make some sort of something later on in the month. White chili sounds good, maybe that'll be it.

We thawed a couple of small flat iron steaks, which DH pan fried, and we shared with our dog. (He's terminally ill and has lost a ton of weight, so we're more than glad to give him ANYTHING he is willing to eat.) We had those with roasted asparagus, and leftover cranberries and stuffing. (We still have one full container of stuffing in the freezer, which we are hoarding for the Christmas holidays.)

I went off the keto diet for Thanksgiving and gained about 1.75 lbs. Follow-on meals also featured carbs. Hoping to claw back lost ground, today I didn't eat until dinner, but I'm sure that leftover stuffing did me no good! We're going out to a special dinner in the middle of the week, so I don't think I dare get back on the scale until maybe 10 days from now.

Well, I must dread shopping, I am out of everything fresh in the way of produce except a couple onions , the inner core of a celery stalk, and a few red potatoes. oh and almost a whole bag of lemons that have gone hard since the last time i shopped, and I still don't want to go.

I fixed ghoulash tonite. With pork "stew meat" that had to be finished off by today. I put chopped pork ,onions, bacon, vinegar( to tenderize the pork)diced canned tomatoes, tomato soup, onions, 2 little stalks of celery , sugar, lots of Hungarian paprica, macaroni, and didnt put the canned corn because i couldnt find a can of corn among all the other food.

it was missing something but I am MEMORY EATING, since September, when I was stripped of most every taste and (Smell) except sweet, sour, salty,, spicy ( burning mouth). i am regaining a microscopic portion of my sense of smell and taste of some a FEW things.
