In 2012, when things in the world seemed to be headed for major changes in our own worlds, the "What's For Dinner?" threads began having a deeper insight into members' lives. Post's became like a personalized quilt square.
It didn't matter what it was, it was just capturing a moment in time.

We seem to be headed down the same path in the world as then, and in the case that our personal lives are upended in some way, this is one way to keep the memory of our world alive as it is now.
It doesn't have to be exciting, it's whatever you want it to be.
Please feel free to join us, and add your square, or just share what's on the menu at your house.

It's an overcast Sunday in NE Florida at 74 degrees. Very pleasant.

The house is nearly all decorated for Christmas, still more to do but have to stop to prep for the week.

My fulltime job is a prek teacher, which I thoroughly love. Since my rent went up $370 in one month, :cry: I needed to get a second job, so I'm back to teaching music lessons after school. Guitar and piano mostly with the first violin student I've had in over 40 years. My first teaching degree was Music, K-12, and I started out teaching music in NY. After my son was born I fell in love with Early Childhood Education and I never looked back. Oh, I never stopped with the music, that's how I teach a lot of my prek lessons. And the kids like it too. It's been a challenge mastering the staggering hours of both jobs, and at my age, it feels daunting when I get up at 4 a.m., knowing I won't get home until 6 p.m. But I'll persevere :lol: as I always do. ;)z zzzzz z

Dinner will be steak, saffron rice and corn.

$370 in one month ???????? Wow. I bailed when they jerked it up $200/mo. where we were. I can't imagine what it is now. OMG. They're outta control. Shame you have to wear yourself out for the rent. Hang in there as best you can, Peggy.

As for me, I'm thrilled to be in this new building which some people are subsidized, me included. I don't know what I'd be able to do at my age otherwise.

Dinner? I dragged out a package of frozen boneless, skinless chicken breasts. So that, and maybe some rice and fresh spinach. Out of desserts until son takes me shopping next week. Which is a good thang. LOL.

Everybody stay warm this coming week. Getting nippy out there now.

On the menu today was a smoked picnic ham that was originally meant for Thanksgiving but didn’t get done in time. So that day we just had the turkey and once the ham was tender it was pulled, cooled and frozen. Put it in the fridge overnight to thaw some then into the oven to re-warm. We also had scalloped potatoes, corn from garden 2021, green beans and applesauce.

The grandkids were asking to put up the Christmas tree as soon as they got here today. We don’t usually do that this early in the month but I had already moved some things this past week in preparation for it so…When a very sweet 3 year asks with her little lip stuck out, it’s really hard to say no. DH and SIL set the tree up, youngest DD “fluffed” it and mostly the 2 youngest grands with some help from their Da (what they call their grandfather) the tree is now decorated. Actually looks very pretty!

Hubby picked up an assortment of pre made entrees from a local favorite that will get us through most of the week. The store has restaurant quality food and they only do premade for takeout. The prices are quite reasonable for the quality, and if I were to try to make the dishes it would cost the same if not more than what we pay. We also now have a microwave for the first time in 17 years. All dh has to do is some heating up.

I’m having Chicken Alicia (rolled chicken breast stuffed with artichoke, Parmesan and pine nuts), Caesar salad and a summer pasta verde salad (Spaghetti, fresh basil, tomato, chunks of garlic, and shredded romano cheese). I’m feeling very blessed all the way around today.

Hubs is making homemade cheese steaks with lettuce, tomato, and sauteed onions on a toasted sub roll. Fries for him chips for me, also some dill pickles. Dessert ( if I have room) Ben & Jerry's pistachio ice cream for me, hubs Dutch chocolate mudslide.
All accompanied with a nice chardonnay of course:)

Today was chilly but sunny here in the DC area. Cleaned up the house a bit while the missus went to church; swapped over my work stuff to my other car only to find i had to jump the car to get it started....Battery was 5 years old, first time it's never started right up.

Wife gets home, first stop auto parts store for a battery. Boy they have gone up! Next stop was Tysons corner mall for a coffee run at Nespresso. The mall was busy with people, the fast food/ Cinnabon/Auntie Annes pretzels type fast food restaurants were busy; not so the sit down places. And lots of people walking around but really few with purchases.
We had lunch at CA Pizza kitchen. After that missus wanted to go look at Tiffany's. Her mom used to give her a Tiffany's gift coin nearly every Christmas, so the place to her is a happy memory. Those coins are no longer made apparently; they're now collectible items.

Also-I knew she was looking for a ring to match the necklace i'd bought from there for her some years back. And i found it and she got it. Here's the ring she got-

Every lady should have a proper jewlery box-i got to add to hers today. She's thrilled and it looks magnificent on her.

We had a big lunch at CA pizza kitchen; they're famous for pizza but we go for their sirloin steaks. That and their artichoke dip was more than enough to tide us over for dinner, so we may graze a little but otherwise we're still full from lunch.

It's been a good day, and i hope all of yall have a great week!

Home from work. Sorta busy day, and one employee did not show up. Oh well.

Sunny day here, supposed to hit about 40, dont know if it got there. And I have heat in my house now!! Got the last of the wood stove put together and the chimney swept, Good to have a fire. The part for the furnace should be here this coming week. I gotta say it pays to have back ups for your back ups!

Dinner will be left over red beans and rice that I made yesterday. Good stuff!!

cold, overcast and slightly breezy day here. At my request Raggedyann built a nice pot of chili for us . . . Just finished a huge bowl of it - topped with onions and some shredded sharp cheddar cheese. fiery hot . . . Doesn’t get much better than that on a day like this :D

Slept late today and so we went out for a late morning brunch. It was a chilly but sunny day so we spent the rest of the day by the fire watching a little football, reading on the computer, and I was also doing some Christmas gift knitting. Planning on watching a couple of episodes of Agatha Christie's Hercules Poirot murder mysteries on BritBox this evening. I enjoy trying to use the little grey cells to figure out who the murderer is. :lol:

Supper was a pot pie made from leftover rotisserie chicken, chopped kale salad, and homemade sourdough bread.

Tell me about it. My diesel pickup just had to have 2 new ones put in. Batteries, oil change, and an air filter......$700!! Batteries were $250 each!!

I boiled out my turkey breast bones and made noodles out of the broth today. YUM.
Mine for the Suzuki was $222.00......I got a larger group 24 battery rather than the OEM fitment of a group size 65. More cold cranking amps. Seems I've bought batteries for all 4 cars since it turned cold.

North to the Future
Has been hovering around minus 10 but warmed up over the weekend to a beautiful, balmy 10 above. Was out early to run errands so driving in the pre-dawn to Wasilla. Two of the mountain ranges were begining to be backlit with the rising sun and a fully lovely sight ~ Air so sweet I wish I could pack it up and send you all some. I like how so many people around here appreciate the beauty of Alaska, even after a life-time, as do I.

I did cook a brisket today - yummy! About 4 hours total (it was not very big, under 4 pounds) and turned out perfect. Dry rub, slow cook in the oven.

Big gym day tomorrow - 6:30 am to about 10:00. Then I can sit in that hot, hot sauna. :) Hope all you dear people have a lovely, happy week!

Skillet grilled chicken breast strips, black eyed peas, spicy greens, home made brownies with lots of walnuts, coffee and Diet DP since I finished the tea earlier.

The DW owes me a pecan pie from last Christmas, that I keep hinting about. Will have to wait and see what gets baked.

We had the chuck roast I bought Saturday.
Baked potatoes, and a steamed mix of broccoli, with Asian vegetables.

Nothing special really, but DH told me twice how delicious the toast tasted. I’ve been experimenting with dry seasoning mixes in preps; I used a Kroger brand of beef stew seasoning, bay leaf, beef broth, sone chopped red and yellow peppers, onions and a splash of Worcestershire sauce.

It was pretty good gotta admit :)
The house still reeks of onion and pot roast smell today lol (lingering food odors )

A have a bajillion seasoning packets, some are out of date but I think they still work, in a pinch. That’s what I’m trying out for future use in different ways.

Today I’m throwing some country style pork ribs in the oven for bbq.
Chicken thighs too.
I picked up extra hours for tomorrow so I’ll be planning and cooking ahead.

After 12 hours, two days in a row, there’s no way I’m cooking when I get home. It’s just too much for me these days.

And Whatever meat I find on sale, that will be the way to go.
