Ova Easy egg crystals. 3 1/3 years past best use date. Stored in a house closet at room temperature.

Added a little salsa while cooking. They were great! This item wouldn't get rotated because fresh eggs were available.
My thoughts are that certain items should be SLOWLY rotated. Meal testing (once a year? other time frequency?) would be wiser than finding out that one's entire supply of that item has spoiled.

My own plans are to stock up for about a one year supply of food. I roughly estimate my usage by looking at the best used by date on containers in the stores, and gauge how many I would use from now to then. If things are not on sale, I can dwindle down to about a 3 - 6 month supply. Costs, rather than shortages are my concern. With a 6 to 9 month window for stocking up, I have the patience to wait for the sales. If the SHTF, there would be no fighting off the hungry hoards, and no more sales.

I was off on cooking oil, with my last stock up, as I had no idea how much I use. I currently have one unused 48 oz bottle with a Jan-23 expiration date. When opened, I will transfer it to smaller bottles. Old oil with a lot of air inside the bottle is not a good combination. I found that out about 20 years ago.

I'm just lucky that I'm not a picky eater. While I wouldn't want to, I could probably eat just chicken (cooked about 20 different ways), for an animal protein, and not be bored.
