Minestone soup from Preps/cans.

2 14.5oz cans stewed tomatoes
2 15oz cans mixed vegetables
3 cups of chicken stock
All of these were 2.5 years past expy. dates.

Put all in a pot and bring to a boil.

In a separate pan, boil water, and add
8oz of dry pasta(I used rotini). Just as it boils turn off heat and cover.

After 5min. add the pasta to the main pot and turn down the heat to simmer. I added 2 smashed garlic cloves(teaspoon or so) and 1, 6 inch sprig of rosemary.
Garlic and Rosemary came from my garden, everything else from a can. Pasta was in a box, but not past the best by date.
Simmer for twenty min.
Yield is about 5 pints. I sure hope I can freeze most of it for later use.

summerthyme; yea it was good. I referigerated the remaining soup and the pasta continued to soak up fluid. After a week, there was so little, that I had to add more chicken stock and water to eat the rest.
