Baking Mile High Biscuits

Mile High Biscuits

3 C flour
4 tsp baking powder
1/2 tsp cream of tartar
1 TB sugar
3/4 tsp salt
1/2 c shortening
1 egg
1 C milk

Mix dry ingredients and cut shortening in until really fine. Mix in egg and milk.

Turn out on floured cutting board and knead about 13 times. Roll out into about a 1/2-3/4 inch layer and cut biscuits out with a cutter or floured glass.

I use parchment paper to line my cookie sheet, but you can spray it with Pam as well.

Bake at 425 degrees for about 12 minutes or until golden brown.

I so need a GF version of this. Been craving biscuits for days. Hopefully there will be a good recipe in the book that's on it's way.

Bette Hagman - Gluten Free Gourmet Bakes Bread
Most haven't heard of her nowadays. Not since the companies started coming out with 1:1 mixes. But I rarely have a fail from her recipes and they are normally because I had to sub an ingredient. She learned the chemistry of how to make it all work and put that knowledge in her recipes. She has several very good books.
