one of my minor hobbies is conducting road trips to
small towns and deliberately searching out small
"mom and pop" eateries. Even if they qualify as "greasy
spoons", inevitably, they have one or more worthwhile
dishes.
There was a change of cooks at one I found and it made
all the difference in their food. Suddenly, the decidely
Institutional food became wonderful. A particular standout
was the green beans served with the special of the day.
I would really love to experience them again (unfortunately
the cook quit the next week and left). It wasn't salt or pepper.
They almost tasted fresh. I even asked for seconds-much
to the surprise of the waitress.
What would/can you add to canned green beans to improve them? Bacon? Onion? MSG?
