Prep Genrl How to store chocolate powder or cocoa?

Since DH is organizing the pantry room, he has come across several bags of Cocoa and containers of Hershey chocolate.

The bags are like mylar, but the Hersheys comes in a plastic container.

Should I leave them in what they came in and store them in a bucket or tote?

I'd leave the ones in Mylar alone. The Hersheys will stay fresh much longer in a glass jar... O2 absorbers optional.

I was gifted 150# of wonderful, high quality dark cocoa powder by a late member here. It's 23% cocoa butter, and makes any of the stuff you find at the grocery seem bland and flavorless.

I passed 50# on to a dear friend (AnnCats on here), and sold 50# for $2 a pound to our Amish neighbor. ( 5 months later, they wanted to know if I had any more! They'd gone through all of it!)

The rest has been in the preps, in heavy mylar bags with O2 absorbers. It's still fresh, rich and delicious. My DDIL can't believe the difference in baking with it,, and I can't believe the prices they want now! I consider it a lifetime supply, and think of Timothy every time I use it.

Any idea where I can find high quality cocoa powder? Chocolate is life around here! :)

Or, they did! Holy cow, what happened? Here is a 3 pack "sampler" of the only three they sell now.:( The Bensdorp seems to be the closest to what I'm using.


I used to be able to buy 50# bags of many different varieties of baking cocoa at a restaurant supply store in Buffalo, NY. You might want to look around your area and see if anyplace like that exists.

FWIW, Hersheys cocoa powder is 10-12% cocoa butter...
