I have an over abundance of eggs and would like to pickle some. Suggestions will be appreciated.

Boil first and peel.
I usually throw mine in pickled beets juice or a jar of dill pickles that's empty. Add a little vinegar and a spoon of sugar.
I know there are fancy recipes but I tell 6a I really just like them in the beet juice.
Every year I make a few gallons of pickled beets from the garden, and add boiled eggs.
But you can use pickled beets from store too. Just add a little white vinegar and sugar as you eat and add more.
Side note, i throw my okra in garden right in jar with dill pickles. Ready in a day or so and very good.

I’ve got plastic gallon jars that had pickles in them and also half gallon canning jars.

although I do not have dill pickles, we don’t like them

PW says there is no safe way to process pickled eggs if you are thinking put on the shelf without refrigeration.

The University of Georgia has a great extension service dedicated to canning and preserving food.

The old country store near us always has a gallon jar of pickled eggs sitting on the counter next the the cash register. They sell the eggs individually right out of the jar for a few cents each. Never needs refrigeration.

It depends on what recipe you are using. There are a ton out there. I thought I had a thread on this in Granny's kitchen. Maybe not. But seriously, there are a bunch of recipes but my favorite is using pickled beet juice.
