Pork Green Chili with Pork (aka Green Chili Stew)

Doing this from memory as I don't seem to have it written down anywhere! Guess I've made it to much, but should preserve this for posterity and the gkids.

1-2 lbs diced pork, floured and browned in lard or bacon grease
1-2 containers chicken broth or stock (Iprefer this to water as it adds a deeper taste)
2 large onions finely chopped
2 garlic cloves crushed or minced (I use minced)
2 tsp salt
1 tsp cumin or to taste
24 canned or fresh roasted green chili's (1 large can of anaheims chopped and 1 small can of jalapeno's will work)
1 tsp dried cilantro - optional (we're pretty much allergic to cilantro, but the dried doesn't seem to bother us).

You can add chopped tomatoes if you like- and they do add more flavor.

I throw everything in a crock pot and let it cook until pork is tender.

Add more salt, garlic, cumin, chili's to your taste!

Delicious except for the cilantro (yep, I'm one of those people to whom it tastes like soap). But I won a prize three years running at our chili cookoff at the telco for a very similar recipe. Total yum, and thanks for reminding me, I need to make this again soon :)

I make a big pot every winter...I use chicken to change it up...make a big ol' pan of cornbread and my guys love me all over again. Freeze a bunch for later on and the hard work is done. Dh like to pour his over a big ol' pile of cornbread stuffing mix...yeah, he's weird and from Louisiana....lol.

Oh,I need to make some with the organic pork in the freezer, I'm the only one that will eat it but I can freeze it in meal-sized portions.

I canned some really similar a few years ago and it was really nice to have around to heat up (pressure canned of course to the time required for the longest cooking ingredient which was the pork).
