Got this from a friend and have made it as gifts, plus need to do more for myself.
1/2 c split peas
1/2 c pearl barley
1/3 c chicken bouillon (if you have a Hispanic aisle in your store look for Caldo Pollo - it's cheaper!)
1/2 c lentils
1/2 c red lentils
1/4 c dried onion flakes
2 tsp dried Italian Seasoning
1/2 c long grain rice
2 bay leaves
1/2 c small pasta (again look in the Hispanic aisle for these - the small packages are super cheap).
Additional ingredients
1/2 lb cooked chicken or turkey (great for leftovers)
Garlic and pepper to taste
6 oz can tomato sauce
14 oz can diced tomatoes undrained
3 qts water
Remove pasta and set aside. Cook chicken and season with garlic and pepper. In large pot, add chicken, diced tomatoes, tomato sauce water and soup mix. Bring to a boil over medium heat, then reduce to low and simmer for another 15-20 minutes or until pasta, peas, lentils and barley are tender.
I do mine in a crockpot if that helps anyone and don't know why you couldn't do it in an Instapot.
Enjoy with a tasty crusty bread (over to you Dennis) and a glass of your favorite adult beverage.
