Recipe Friendship Soup in a Jar (variation on Survival Soup)

Got this from a friend and have made it as gifts, plus need to do more for myself.

1/2 c split peas
1/2 c pearl barley
1/3 c chicken bouillon (if you have a Hispanic aisle in your store look for Caldo Pollo - it's cheaper!)
1/2 c lentils
1/2 c red lentils
1/4 c dried onion flakes
2 tsp dried Italian Seasoning
1/2 c long grain rice
2 bay leaves
1/2 c small pasta (again look in the Hispanic aisle for these - the small packages are super cheap).

Additional ingredients

1/2 lb cooked chicken or turkey (great for leftovers)
Garlic and pepper to taste
6 oz can tomato sauce
14 oz can diced tomatoes undrained
3 qts water

Remove pasta and set aside. Cook chicken and season with garlic and pepper. In large pot, add chicken, diced tomatoes, tomato sauce water and soup mix. Bring to a boil over medium heat, then reduce to low and simmer for another 15-20 minutes or until pasta, peas, lentils and barley are tender.

I do mine in a crockpot if that helps anyone and don't know why you couldn't do it in an Instapot.

Enjoy with a tasty crusty bread (over to you Dennis) and a glass of your favorite adult beverage.

Sounds great! I'll probably be doing some goodies in a jar type stuff for Christmas gifts. Nice to have options besides sweets, though I am quite partial to them!

I am confused. Can you help me out? "Remove pasta and set aside."

1st question - So if you want to assemble as gifts, do you keep it separate so people don't have to pick the pieces out?
2nd question - What are we setting it aside for? I cannot see where we add it to the soup, but i know we must at sometime because the last sentence of the recipe mentions simmering until pasta and other things are done.

I put it in a sandwich bag and pack it separately in the jar after I've filled the rest of it. I put it at the top so it's removable for the later addition. You add it to the soup at the very end. Sorry I wasn't clear, I just put in the recipe I was given.

Hope this clears up your confusion! I got to thinking you could also vacuum pack the ingredients with the pasta (again in a snack or sandwich bag for the later addition) - which is what I'm going to do after I get done with the Christmas cookies I need to get done.

I am also interested in how you do it in a crockpot - dump it all in? Water, soup mix and all? hi or low? how long?

Oops! My bad! I forgot this part - I just dump it all in, on low, and usually cook overnight, but I'm at 5,000+ feet too. Then I add the pasta at the very end for about 10 or 15 minutes until done.

Thank you!!! I had assembled all the ingredients but was dragging my feet on just taking a whack at it to see how I did.

Back in 2004 hurricane season I sorta became the lunch lady for the little neighborhood and was thinking something like
this might be handy if something similar happened.

Focusing on what I CAN do - and doing it - keeps me calmer.

**** I just re-read that and want to explain a bit. I am not interested in just feeding everyone. In 2004 several men in the neighborhood formed what I called the Chainsaw Brigade, taking care of trees blocking the road or on houses. I kept them in coffee in the mornings and full bellies mid-day. That was my first hurricane experience in Florida and I've kept it in mind and improved since then.

Purely as a prep, I am thinking a can of chicken might work well in it.

UPDATE

I did the crockpot on low overnight with

and 3 qts water.

Tonight after work I fired it up again and added a can of chicken - I forgot the pasta LOL
This is EXCELLENT to keep in the pantry meals rotation if we dont have fresh chicken on hand.

Based on shopping last night at Publix in FL, pricing for :

16 oz red lentils $1.19
16 oz lentils $1.05
16 oz pearl barley $.79
16 oz split peas $.99
16 oz white rice $1.04
Total $5.06

Each 16 oz bag holds approximately four 1/2 cup servings. So, since we can make four batches of soup using these, for these ingredients the cost per recipe = $1.265

My husband and I got several thick, warming bowls .

This is now in our meal rotation.
