EggNog Pie

The original eggnog pie, my mother made, when I run across her original recipe I'll post it. The original involved heavy whipping cream and eggnog and simmering it on the stove, constantly stirring, until it coated a silver spoon. Guess who had to do the constant stirring....seems like it took forever. So after I was married, 36+yrs. ago, I decided to try to come up with an easier method. I did, but it's still not as good as the original. The first attempts was as a Dream Pie, using the powdered Dream Whip and substituting eggnog for milk. Then, the one I usually use is simple and doesn't have an overpowering taste, but is rich.

2 pkgs. vanilla instant pudding (3.4oz each)
2 cups of a good quality eggnog (not the runny kind)
4 oz. of coolwhip
9" baked, cooled pie shell

whip first 2 ingrediants, then turn in the coolwhip, mixing well, spoon into shell, top with fine shedded chocolate. Refrig. until set.

It's also good with the Nabisco Nilla pie crust and the Nabisco Oreo pie crust. You'll get enough for 2 pies if you use the Nabisco pie shells (they're little)

I was going to ask for the recipe, and then saw that someone else had already asked, so I followed the link here. The egg-nog pie sounds wonderful, and I've copied the recipe and will certainly be giving it a try. We have a local dairy that makes a wonderful, thick eggnog and that will probably be perfect for the pie. Thanks!

If you like good eggnog, I'm sure you'll like the pie. We are in the same situation here, local dairy is the only kind I would use. National store brands can't even compare.

Around New Years I purchase a supply and freeze it. I've used it thru Easter without any deterioration in quality.

Thank you, Arubi...just the answer to my question of what dessert to bring to a Thanksgiving dinner DH and I have been invited to...wanted to make something different (you know, not pumpkin pie) but with the flavor of the holiday season.

The Eggnog Pie is perfect...and (for an added feature) it's easy to make if I follow your modernization of the older recipe.

Be sure to lick the spoon after you fill the pie shell ;) , it'll give an indication of taste. But, depending on the size of the pie shell...you might have enough for a small bowlfull:)
