For YEARS, SO made the BEST baked chicken thighs I've ever tasted. It was called PARMESAN CHICKEN...so easy as to be made by even a culinary midget like myself, but he enjoyed the years of oohs and ahs from all who ate his chicken.

Turns out this recipe was from the <i>National Enquirer</i>, as I found the torn out page in our recipe drawer one day, torn, yellowed, but still legible.

Mix 1 cup Miracle Whip, 1/2 cup Parmesan cheese [or any other type of cheese you like], and 2 tsp. Oregano. Slap it on 2-3 lbs of chicken and bake 45 min at 375. [serves 4-6].

Not only does it TASTE great, but it SMELLS great in the baking.

So...there we were this past week when I noticed some things SO wanted to pick up from the store. *I* had some things to get, so I picked up the things on HIS list, as well.

Next day: What did you intend to do with the chicken thighs? "Well, I thought I'd make the miracle-whip cheese thing, but we used up all the cheese on the spaghetti sauce. So, I looked to see what we had on hand in the form of a replacement. I found a packet of Ranch's dressing mix...the powdered stuff that one would stir into sour cream for a dip.

I suggested that we simply mix THAT with the mayonnaise and bake it for the same amount of time. He did, and it was DELICIOUS! The flavor went through the entire piece of chicken.
Fast, easy, and delicious. What more could we want?

That sounds good. I'll have to give it a try.

I've barbecued fish using the mayo-parmesan mix and it was very good. Next time I'll try the mayo-ranch combo.

It sounds delicious both ways! And I can't wait to try the parm-mayo on fish! Actually, I have a real weakness for mayo on ANYTHING.

Here's my easy chicken recipe:

Throw a few pieces of chicken in the crock pot. Sprinkle a pack of taco seasoning over them. Dump about a cup of salsa on top of that. Cook it all day. When you get home from work, stir about a tablespoon of cornstarch into about a quarter cup of water. Dump that in the crock pot. Then, about 15 minutes before you want dinner, stir in a cup of sour cream.

My family eats this stuff like it was lobster or something! I don't measure anything, I really just dump it in. I usually use fat free sour cream in this and it tastes just fine. I have used boneless chicken breasts and bone-in pieces of all types with good results.

The only thing I haven't tried is using frozen chicken because I'm scared it will grow all kinds of bacteria in the crock pot...
