I'll tell you what I know of maybe that will help.
Mum use to slice cukes and put them in a half vinegar half water soak.
I like to slice them thin then mix up about 1/4 c rice wine vinegar, a few good sized slices of pickled ginger a small pinch of stevia or sugar if you use it and a dash of salt. I wiz it up in the food processor then pour on the cukes. We like this one a lot. Let it stand at least an hour before eating.
