Crazey Chocolate Cake

I thought I would post the old "crazy chocolate cake" recipe. This recipe is very forgiving and always turns out decent. By mistake, I used a 1/3 cup to measure the flour and the sugar, rather than a 1/2 cup - seems the kids had spirited that away, and I didn't notice! The mixture turned out more like brownies than the real crazy cake, but we scarfed the result down in less than 24 hours just the same!

By the way, this cake is ideal for mailing/preserving as it does not use perishable ingrediants. Enjoy!

Crazy Chocolate Cake:

3 Cups flour

2 Cups sugar

2 t. baking soda

1 t. salt

6 T. cocoa powder

Mix dry ingredients together. May be mixed directly into baking pan (9 x 13 recommended)

Make 3 depressions in dry mixture - 2 large depressions and 1 small. Into each of the large depressions put:

12 T. cooking oil

2 T. white vinegar

In the small depression, put in:

2 t. vanilla

Stir.

Next:
Take 2 cups luke-warm water, dump all over the mixture, and stir well.

Pop into the oven at 350 for approx. 40 minutes, and you will have a very nice and easy chocolate cake.

What I like to do for frosting, once the cake cools down, is:

Take a cup of confectioners sugar, 2 T. milk (or water, if milk is not at hand) and 1 t. vaniila. Stir well by hand and drizzle over the top of the cake.
