Thankfully, I stocked up obsessively 10-12 years ago... when hand printed and diet quality cotton bstiks could be found for $5-$6 a yard. All of it has been preached, ironed and stored in fabric organizers which look like clear topped small suitcases. Plus, I have bolts of cotton jersey, 10 oz cotton duck, as well as tons of wool and several bolts of silk.
About the only thing I'd like to have more of (but won't be getting) is heavy 100% cotton denim. I've got a great source in Pennsylvania, and they have great sales. Get on their e-mail list and you'll get offers and heads-up on sales... last fall I got heavyweight brushed twill in RealTree camo pattern (making dog beds out of it) for $4 a yard! They're called Nick of Time Textiles...
