Christmas Cookies

What kinds of Christmas cookies will you be making this year? I'll have to do chocolate chip w/ and w/o walnuts and probably a lemon cookie of some sort or face family wrath - lol.

I'm looking to try some new stuff though, so if you can post a recipe or a general idea that would be great.

I always do the peanut butter blossoms with Hershey kisses and some with the mini Resse cups. I do what we always called Chinese New Year cookies. I think they're also called haystacks. You melt one bag of semi-sweet chips and one bag of butterscotch chips and mix them together. Add a can of chow mein noodles and some walnuts. Then drop by spoonfulls onto wax paper. Those two I HAVE to make for the kids, then I have to make almond flavored spritz cookies for my husband. They don't care if that's all I make, as long as there are lots of them!

I make my basic oatmeal-peanut butter-chocolate chip and then I use the same basic dough, minus PB, with dried cranberries and white chocolate chips.

Dang. Gotta stop reading these food threads. Now I'm hungry! :lol:

Well, I had forgotten all about PB Blossoms! I went out and got some Hershey Kisses to make some of those. And I remember the chinese noodle cookies from when I was little!! I bet my kids would love those, so I'll add that to my list as well. I also added snickerdoodles.

I LOVE Snickerdoodles! I've never made them for Christmas, but I think I will this year.
 
I found a good cream cheese cookie recipe I fell in love with, so I'll be making those, along with the traditional chocolate chip, oatmeal, peanut butter, etc.

I'd sure love to get some candy molds and try my hand at those.

Chow mein noodles?? That sounds gross but I betcha they taste good anyway. :lol: No oven this year so no cookies but I'll copy the recipes for when I can bake again. Can't wait!

I like the chow mein noodle cookies because they don't get baked. Just melt the chocolate and dump in the noodles and nuts. The noodles aren' t like regular noodles, they're kind of round and crunchy. They remind me a little of pretzels.

I got a double batch of Peanut Blossoms and Snickerdoodles made tonight. This long weekend has always been the time for me to do all my Christmas baking. Didn't happen this year though. My oldest daughter took me on an over-night shopping trip with her and her friend on Friday and Saturday. On Sunday I had to go to my neice's baby shower (twins!!), so today is the only day I have left. I'm pooped!!!! I'll try and get some of the easier stuff made in the afternoons before I go to work. Too much to have to cram in over a few short weeks. I'm still no where near done with my shopping either.

I LOVE Cream Cheese cookies, but haven't had them in years (literally).. These were my favorite growing up & since my Mom no longer remembers how she used to make them (aging), I've been outta luck. IF you can share that recipe, it sure would be appreciated! :)

Shep, The molds are really easy to use. I've been making peanut butter cups and chocolate covered cherries for years. I watched a demo in our grocery store and bought a few things right on the spot. I've been making them for gifts ever since. All my brother ever wants for birthdays and holidays is the peanut butter cups! Our grocery store sells the molds and chocolate and other stuff you'd need. Walmart has a lot of the stuff too. Nothing hard about any of it, it just takes a lot of time.

The worlds best cookies (at least my family thinks so. I will warn you-the are a bit of a pain to make-but well worth it)

Almond Crescent Cookies

mix together throughly

1 c soft shortening (1/2 butter)
1/3 c sugar
2/3 c FINELY ground blanced almonds

sift together and work in
1 1/3 c sifted all purpose flour
1/4 tsp salt

chill dough. roll pencil thick. cut into 2 1/2 in length. form into crescent shape on ungreased baking pan. bake until set - NOT BROWN. cool. while slightly warm, dip into mix of 1 c confectioners sugar mixed with 1 tsp cinnamon.
Temp-325 degrees
Time-14-16 min

The above was my grandmothers recipe. I got "stuck" making them for my sisters wedding reception 36 years ago today. I have hated making them since. But they literally melt in your mouth. This is the only cookie that ALL of my family requests every year-some ask for ONLY these as a gift.

Just my observations- take about 1 tsp of the dough-roll about the diameter of your pinkie finger-about 2 inches in length-then form into the crescents-
also-make sure that the dough stays cold-if necessary-only take out small amounts that you are working with at the time-keeping the rest cold.

Another recipe from my Nana

Not sure if this is what you want in a cream cheese recipe-but here goes-

Nana's Sugar Cookies

1/2 lb sweet butter
1/2 lb cream cheese
3 c Presto flour (or all purpose with 4 tsp baking powder and 2 tsp salt)
1 c sugar

Cream butter, cream chees and sugar. Add flour. Refrigerate til cold. Take 1/2 dough-leaving rest in fridge. Roll flat (to about 1/8-1/4 in thick) Cut with cookie cutters. Sprinkle with finely chopped nuts and sugar (press lightly into cookie)
Bake at 350 degrees for 10 min (til LIGHTLY browned)

Eggnog Cookies

I made these last year:

Eggnog Cookies

2 1/4 cups flour
1 tsp. baking powder
1/2 tsp. nutmeg and cinnamon
1 1/4 cups sugar
1 1/2 sticks butter
1/2 cup eggnog
2 tsp. vanilla
2 large egg yolks
1 T. ground nutmeg for topping

Combine flour, baking powder and spices. Mix well. Cream butter and sugar, add eggnog, vanilla, and egg yolks, and beat until smooth. Add the flour mixture until combined. Drop by teaspoons onto ungreased cookie sheets. Sprinkle lightly with nutmeg. Bake 23-25 minutes at 300.

The only problem with making them, is that we EAT em all! We share with friends and family, and eat the rest.

We'll probably do rolled sugar cookies (frosted and decorated), a shortbread cookie, and maybe some of the old fashioned Wandas (Italian cookie).

A quick and pretty candy is made by melting white chocolate/almond bark and adding crushed candy canes. Spread it out on a greased tray or wax paper. When dry, break into smaller pieces and you can wrap it in colored plastic wrap or celephane (sp?) and tie with a ribbon.

It looks so pretty--and it is very minty after it sits a couple days.

Ahh heck! I gotta admit I haven't baked cookies in a couple of years. So I will most likely get some cool paper plates and store bought cookies and wrap them up! :micky:

Thanks Kittymom - I am definitely trying the Almond Cookies. If they are the same as the cookies I have in mind, they are one of my favorites. I am going to try them because they sure sound like those delicious cookies I remember from childhood.

We always do the sugar cookies, Russian teacakes(Mexican wedding cakes) and a salty peanut cookie (from my Nebr Grandma). I'm gonna try the Almond cookies, they sound so good. Time sure does fly. I remember making these with my son and now I'm making them with my grandchildren. Now my son joins his father in the kitchen long enough to make a run and grab on finished cookies.

Here are Cream Cheese Cookies from my 1953 edition of Joy of Cooking.


CREAM CHEESE REFRIGERATOR COOKIES

Makes about 60 2-inch cookies

Blend until creamy:

1/2 cup butter
1 cup sugar
1 well-beaten egg


Soften slightly:

1 package (3 ounce) cream cheese


Beat it into the butter mixture with:

2 tablespoons sour milk
1 teaspoon vanilla


Beat in:

2 cups all purpose flour
1/8 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Shape dough into rolls about 2 inches in diameter. If dough is too soft to handle, refrigerate until you can. Do not use additional flour. Cover rolls with wax paper and chill 24 hours.

Be sure to sprinkle cookies with sugar, to which you may add cinnamon. This dough, after being chilled, may be rolled to paper thinness, cut into shapes and baked. Bake in 350 degree oven from 12 to 15 minutes.

These recipes ALL look GREAT (I'm copying all of them)! Not sure which cream cheese recipe is the one that my Mom used so it looks like I've got some experimenting to do! No problem. :D

Just mixed the dough for another of my grandmother's traditional Christmas cookies. This was the only time of the year that she made any of these.

Parkay Shortbread Cookies

1 lb Parkay margarine
1 c light brown sugar
1/4 c sugar
2 egg yolks
1 tsp vanilla
4 c flour

Cream Parkay with sugar throughly-add egg yolks and vanilla. Mix well. Blend in flour. Chill. Roll into small balls. Place on baking sheets. Flatten with tines of a fork. Bake 15 min at 400 degrees.


Have always used Parkay according to her recipe. Guess you could use any kind of margarine.
Roll into balls about 1 inch across or slightly bigger.

Cream Cheese Cookies

1 C Butter
1 (3 oz) pkg cream cheese, softened
1 C sugar
1 egg yolk
2 1/2 C all purpose flour
1 tsp vanilla
*candied cherries or pecan halves (for decoration if desired)

Cream butter and cream cheese.
Slowly add sugar; beat until fluffy.
Beat in egg yolk; add flour and vanilla. Mix well.
Chill dough at least 1 hour (usually overnight).
Shape dough into 1 inch balls (I use a melon baller) and place on a greased cookie sheet.
*Slightly mash either a pecan or candied cherry in the center of each cookie.
Bake for 12-15 minutes in the oven at 325 degrees F.

Makes 7 dozen cookies.

*I did not use pecans or cherries, but I divided the dough half and half before chilling and added just a touch of food coloring for the Christmas colors. I gently pressed the balls on the cookie sheet with my fingers to just slightly flatten them.

Ooooh someone just reminded me of the wedding cookies I made one year. They were work, but so delicious.

This year, I am making some containers of goodies, mostly for a large group of regulars where I work.
I got these hexagonal containers with lids from smart and final, some small treat bags from a craft store, and searched the web for recipes for treats, findling most ideas at allrecipes.com.
I think I've decided on:

Grandpa's popcorn balls in treat bags, Cinnamon-sugar roasted almonds in treat bags, and beside these in the containers, Creamy Orange Fudge, and Puppy Chow. I have an idea of what I would like the containers to look like, and hope they turn out okay. I will post a photo when I get done making them, probably sometime next week.

OH MY GOSH!!!!
I just made your Parkay Shortbread cookie recipe and I had to tell everybody just how GOOD they are!! They just dissolve in your mouth. They're pretty rich but its not like you're gonna make them every day. I wonder how many calories is in a batch of cookies that has a POUND of margarine in the recipe?? :shkr: Oh well, I'll diet next month(probably the next 3 months) Thanks for the recipe, Kathy :D

Hey, just found this thread (and am I glad I did, the recipes sound delicious...) and I wanted to add my "Stuffed Sugar Cookies." (They were never named before. :D ) The thread with these is under Homesteading. The stuffed cookies are turning out great. I brought the Peppermint Patty stuffed cookies to a company Christmas party, and they were a huge hit. And I mean huge!!! I forget which of the members of TB2K suggested it, but the cookies were gone in seconds.

I iced them with buttercream icing and "icing painted" the tops with Christmas decorations like candy canes, trees, bells, and angels, etc.

I love this time of year. ;)
