Recipe Banana "Muffins" (raw vegan, dehydrator required)

A good way to use your LTS grains.

BANANA "MUFFINS"

1 cup soft wheat berries, sprouted 1 days
2 cups oats, sprouted 2 days
3 bananas (I use both fresh and dried banana chips that I have rehydrated)
3/4 cup honey dates
1 t. vanilla
1 t. cinnamon
1 cup walnuts, soaked 6 hours and chopped

Process wheat, oats, banana, and dates. Add vanilla, cinnamon, and walnuts; mix well. Form into 6 round muffins approx 3/4" thick (they look like cookies or muffin tops). Place them on drying rack that is covered with a nonstick sheet. Dry at 105 degrees F for 4 hours. Flip and dry for another 4 to 6 hours at the same temp until they reach your desired moisture level.
