FOOD Vigo Yellow Rice

The yellow is saffron. I found small bottles of saffron at Tuesday Morning store some years ago at a discounted price. I bought every jar they had. I'm still using it. Just a pinch is all that is needed. My grandmother use to add turmeric to pasta and potatoes to get the buttery look. It only takes a smidge.

I got .14 oz jars marked down to $4.99. Pure saffron from Spain. I remember the manager said no one bought this, what is it? Watch for Pure Vanilla Bean Paste or Vanilla Crush. Also the Jam Shoppe brand of fruit butters. I scour TM food shelves. They are not as stocked or varied as it use to be but I do find a gem or two now and then.

We like the Mahatma yellow rice better. Throw a can of chicken in it, and you have a whole meal. Lasts a long time in storage.

Saute up some onions and bell peppers, add some Cajun seasoning, plus the canned chicken, and add to the rice, before it begins to boil. That's one of my one pot pantry meals. I buy Mahatma yellow rice by the case at Sam's.

I'll have to try that. Thanks!
I always brown any beef or pork before I use it in a recipe because it improves the flavor by orders of magnitude. Just takes a little extra time but the pay-off is big.

The Mahatma brand looks like it’s packaged in foil. How long have y’all successfully stored in it’s original package?

Vigo used to make a black bean and rice also. We loved it. Sadly I don't think they make it anymore as we haven't seen it in the stores in years. I just saw the cilantro lime recently and meant to pick some up. I think I will this week.

Make sure it is from saffron.

This is a piece of obscura from Flutrackers.com from years ago. Someone reportedly genetically crossed rice and daffodils to get a GMO yellow rice. Yes I know the flowers are poisonous. They're one of the few deer will not eat. I used to hid the tulips in the daffodils.
