DH said the temp went down to around 32 last night so a few degrees warmer than expected. We had a breeze so that kept us from too much damage, not sure about tonight. I noticed some of the cannas outside my bedroom window got bit but others that weren’t too far away fared better. DH built our first fire in the outdoor furnace for the season last night too and transferred the electric water heater over to the other one that’s heated by the furnace.

I removed the tendons from the chicken tenderloins we bought at Sam’s the other day plus the pack I found in the freezer yesterday searching for the brats. They’re all soaking in buttermilk in the fridge and we’ll be frying those up to flash freeze and vac back soon. So looks like chicken strips is what’s for supper tonight. It’s going to take awhile since there’s 7 1/2 lbs to do. But they are so handy to pull out of the freezer and pop in the air fryer for a quick meal. Off to the kitchen.

Harvested more cane today. This will be our first year to try making syrup! Dug sweet potatoes and picked okra probably for the last time this season. Checked white potatoes and we have potatoes!! Sunchokes made well also. So overall I would consider this year a good gardening year. Side note...used heat this AM!

Years ago my Mother and I decided we wanted to make syrup. My Dad and my husband carefully tapped some sugar maple trees we had and brought us the sap. We went to the basement kitchen and began boiling it down. Next thing we knew, we had syrup dripping from the ceiling. I now see why I used to see pictures of syrup being boiled down OUTSIDE. What a mess!

My memories from childhood are of syrup cooking. Here in the south syrup was cooked outside and was a big party! The men crushed the cane with a mule? And then started cooking that juice. Some of it was made into syrup candy for the kids who were running everywhere. I remember it being cool enough for a jacket so it probably was in Nov. The scent of cut cane sends me back in time! Would love to tap a maple tree!

Sorghum for syrup is a big money making crop here in Mississippi. There is a place a bit SW of us on the Natchez Trace Parkway that has a sorghum festival every year when all the sorghum is brought in. The sorghum is crushed with mules out on the open grounds, cooked, and sold right there on the spot. I think it's called a sorghum mill. The mules are all hooked up to it, and they walk around in a circle turning the press. We been several times. It's always fun to watch.

I remember my Aunt telling me that after she was married in 1929 about moving with her new husband to the Shenandoah valley of Virginia on his family farm. One of her jobs as a young bride was to walk the horse around in a circle...as they were making apple butter..they had a long paddle attached to the horse to stir the apple butter cooking in a huge pot over an outdoor fire.

Do any of you store the 12oz canned roast beef like you get at Sam's? If so, I need a recipe for using it with potatoes if ya'll have one. I've got a lot of it stored, but have no clue as to how to use it. I used it once as an experiment, but would like to have actual working recipes. Thanks.

I don't buy that stuff, but any recipe for leftover roast beef should work. You might want to store some jars of gravy, or packets of gravy mix to use...

Prayers offered for you, Moldy...

I'm not sure how I'd use the canned beef with potatoes, Sherree, other than make a gravy and use it to top mashed potatoes. I use my home canned beef for beef and noodles, beef stroganoff, beef vegetable soup, etc...

Cold out here today; 24*F when I got up this morning; and is still a chilly not quite 40*F. The garden is toast for the year other than digging the potatoes and adding a few trailer loads of compost along with some bagged leaves once they are available. It is supposed to warm up and have lows in the mid 40's to 60's for a day or so; then 50's up to mid/high 70's; I'll wait until youngest grandson is here to help me on Saturday late afternoon into Sunday to dig both types of potatoes. I did sneak out to the stock tank next to the porch where I planted part of the sweet potatoes, and am having one, or rather half of one - they got a little big!! - for lunch right now - yum!!...

I don't know if it's the cold weather or allergies, but something has been zapping my energy the past few days. I did manage to get the inside cats to the vet for their annual check-ups/vaccinations yesterday when I took the grand-dog home, but had almost no energy once I got back home. Today has been a little better, energy wise. I've been doing some cleaning and sorting, but am just about ready to plop down in my recliner for a bit. I'll set an alarm so that I'll hopefully be able to get at least a few more things done, but whatever it was won't involve stairs as my knees aren't loving me at all today - I've already carried some boxes of home canned stuff down to the store room, but don't think I'll be doing any more of that today. The right knee - the one I got the Euflexxa injections in - is doing okay, but the left one has tried to go out on me a few times today; really don't want to do knee replacements if I don't have to...

Gonna go hit that recliner for a bit - you folks all take care out there; stay safe!!

Thanks for all the roast beef recipes! I was thinking of trying roast beef hash with a can to see how we like it. We like my roast beef cooked in the crockpot with potatoes.

Just got home from getting groceries for another 2 weeks, and I have it all dated and put away. Big haul, including more to add to my pantry. Walmart was loaded with stock all throughout the store. The only thing I saw that was low was the margarine section. There was plenty of butter, but no margarine of any brand. I always buy butter, so it wasn't a problem for me. Plenty of turkeys, whole turkey breasts, bags of frozen chicken of all types, and whole and half hams piled high.

Peas and tomatoes took a beating last night even with covering them. They were pretty wilted this morning. Tonight, is the last night of freezing temps, then it's back into the 70's and 80's for highs and 50's for our lows. I don't know if they will be ok or not. Was 29 last night. I haven't been down to check on them this afternoon.

I just watched a video from Appalachia's Homestead with Patara and she was talking about spray on Flex Seal that she used on boots and shoes. I just put a can on my walmart grocery list, I may go tomorrow. Seems like a good idea to have some on hand.

And speaking of videos I've been unsubscribing to several lately. Any that say you need to buy these 10 things, etc. For me I long ago bought those things and no sense in using my limited band width even having them on my list of subscriptions, mostly because they get on my nerves just to see their got ya headlines.

I have just got to lose some weight. Most of my fat jeans I can't fasten and that's a problem. And my winter warm shirts are just about too tight and certainly won't meet in the middle. I refuse to buy larger clothes. So I'm going to try, again, alternate day fasting. I've had some success with it in the past. I've just been eating way to much for awhile now. Its been a year since I had covid, I lost 15 pounds, and now I've gained it all back. My backside is getting ax handle broad, so to speak.

Praying for you Moldy.

I don't have time to sit and watch very many videos, so we don't subscribe to any. Other than the occasional video I watch here, we don't watch any.

I've lost 10 lbs on my diet, but I not being strict about it. If I'm not careful, I'm going to gain back all I've lost. We've been eating out a lot, lately, and it's beginning to show. I just hate having to give up a lot of the foods I love and enjoy.

Cary ordered for himself 3 new shirts and one pair of pants this morning from Cabella's. He loves their Carhartt clothes. I think we're both set on winter clothing for this year. He's finally gained back all the weight he lost from sepsis and surgery. For a while there, all his clothes fit saggy on him, so he really needed to gain this weight back.

We're going out to eat, tonight for our anniversary. At least I can stick to my diet at this restaurant. I always order a grilled chicken breast with mushrooms, onions, bell peppers all cooked on the grill topped with bacon and shredded cheese, a big garden salad, and steamed broccoli. Cary eats my bread, and no dessert. I still can't chew steak, so I get chicken, instead.

Have you heard of Jane McClelland? She has a book called "How to Starve Cancer", that has a lot of info about alternative treatments that work with and assist chemo and radiation.
Your oncologist will not approve, but they don't need to know, either.

A storage tip that everybody else may have figured out. When I buy a flat of canned goods I always look for a cardboard box the same size as the one the canned goods are in and out it on top. I wrap packing tape around the two boxes and they stack really well this way. The Best Buy date should be on the bottom box along with what is in the flat. It works so much better than buying one or two cans at a time and trying to store them.

Continued prayers for you, Moldy. I make a lot of smoothies in my blender--start out with coconut (or almond) milk and add banana, pineapple, blueberries and anything else that I have on hand. Throw in a spoonful of peanut butter for added protein or maybe protein powder if you have it. They are really good, easy to eat and have a lot of nutritional value. I do not like ensure and drinks like that but they can be "hidden" in my smoothies.

take that "sqeeze pack" a step further - instead of just tape around it - get a hand roller of poly stretch wrap >>> goes a long way in keeping the cans from rusting - you can even make small desiccant packs to enclose inside ....

Illini that is a really good idea. Any tips on best wrap to do this with?

the poly hand wrappers are available in the mailing/shipping package supply section of the retail stores - a roll goes a looooong way - it needs a grip to start the wrapping and from there on the wrap sticks to itself - you get a couple of layers and you'll need a knife to get inside .... Mini-Wrap Stretch Wrap, Mini Stretch Wrap Rolls in Stock - ULINE - Uline

what also comes in handy to have around for wrapping things up to protect them - there's industrial size poly wrap rolls that are like 24-30" wide - again it's a hand dispenser for best usage - used to stretch wrap around pallet loads of boxes/equipment >>>> for emergency closing up a damaged building or a vehicle - fast and effective - especially like windows/doors .... Goodwrappers® Premium Stretch Wrap System in Stock - ULINE

ever find yourself in a post-SHTF situation going thru a looter rampaged warehouse/factory - if you see a pallet turntable wrapping machine in the shipping department - there's a poly roll supply somewhere - doubt if the looters think that far ahead ....

We had a great time wining and dining last night, LOL! Food and service were outstanding.

After we ate, we ran on over to Sam's, since we were already in Big Town, and bought a few more items that were "in store" only to add to our preps. I threw in another nice, plush throw for the sofa, too. The store was fully stocked. Cary wanted a couple more winter shirts, so we went shopping for those, too. He got 2 more, and I got for myself a nice lavender pull-over thick knit sweater.

Prayers, moldy.

My ss check came 5 days early again this month.

I was planning a trip to wm today and not because I was waiting for my check. I have a small list and I've been wanting yogurt since I ate the last of it last week. I've got a 2# package of mixed vegetables on my list to dehydrate along with a couple more packages of shredded cabbage.

Last time I was in wm I looked all over the place for slow cooker liners, someone suggested they may be by the slow cookers, I'll look there today.

I may add a couple of things to the cart for storage, but not much. Some how I think I can't have too many cans of diced potatoes and the wm brand of canned mixed vegetables. They are still a good bit under 1.00 each.

I placed a rare order to amazon to include more batteries. I've looked around and have much fewer batteries than I though. I'm also getting a couple bottles of "Australian Gold Aloe gel with lidocane. And I also placed an order to Vitacost, that order seems to be monthly lately. they have decent prices and I trust their products.

Nomifyle, I usually find the slow cooker liners with the foil and plastic wrap.

I had an interesting week. Last Wednesday I just couldn't catch my breath after walking just a few steps. Went to the ER and found out I had blood clots in both lungs. Spent a week in the hospital on blood thinners (and have the pills at home now) trying to dissolve said clots. Doc said I was very lucky. I have tons of medical preps, but nothing that would have helped in this situation, so I was very thankful for modern medicine and am even more aware of the limitations that even a well stocked medical kit can do.

Quick trip to the grocery store yesterday to pick up a few items that were on sale. Lucked out that my toilet paper also had a $3 off coupon in the blinkie machine, so I got two of them. Might go back for more. Made them half price after the sale. Publix also had raspberries for 99 cents--got several of those and they are now in the freezer. Will make some mixed berry jam later. Already have the strawberries, blueberries and blackberries. I buy a bunch when they are on sale cheap and freeze so they are there when I am ready to make jam.

Then I hit what would be a prepping jackpot. In this case it all goes to the food pantry. Microwave bowls of pork and beans for 47 cents (they had a ton, I got 6). Cans of Chef boyardee spaghetti and meatballs for 50 cents (they only had 5 and I got them all). The big cans of spaghettios for 91 cents (they only had 3 left and I got all of them). And then the really big 40 oz cans of Chef boyardee ravioli for $1.41 each. They had a lot of those and I got my fair share, not all of them. For some reason all of them were on clearance and were dated June 2024. I already have a ton of this stuff, so the food pantry will benefit and some folks will get to eat. I was quite pleased to find such an unadvertised deal.
