Ya my budget too. I got four kids. We got steer in the freezer, refried beans, cheese and tortilla. To each, his own. I happen to like refried beans and experiment with tortillas. It fits my budget, too.

Only problem I can't find refried beans anymore. Can't get a case on amazon and the Rayles can only buy two cans at a time. I'm digging into my stash now.
Me too Dennis. I know exactly how you feel. But i am retired and it's worse. I live all alone in the country and i absolutely HATE staying home. I will go out for ANY excuse even just to the store to get out. I will order out or go thro the drive thro now, eat in the van, read a book or newspaper, lay down and take a nap, and then drive home to my lonely house. I live like you do too i think. No human to talk to. I do have dogs and two cats, but being all alone constantly with no human to talk to is horrible. I sometimes am so bored that i take two baths a day! I read in the tub or listen to the radio. In fact i have the radio on 24 hrs a day even when i am sleeping. Sad to say the radio is "my friend". At least you get out to work. If i worked i would be ok and wouldn't mind so much coming home. I sit alone too. I know how you feel!PDW, perhaps you don’t understand. The reason I go to restaurants is to GET THE HELL OUT OF THE HOUSE. All I do is go to work and come home directly after. Day after day after day. There is NO ONE TO TALK TO AT HOME. I just sit there alone every night. I doubt that most of you live like I do.
I WANT TO GO OUT. I WANT TO DO THINGS.
Ohh, i'm gonna try that too. I wrote it down. I got a bag of potatoes. Thanks!yummy! I love lentils. cook mine with some ham and bay leaves a bit of sage, some onions, celery, few potatoes if you like, and a pinch of cinnamon. I put a small pinch of cinnamon in everything and makes everything a bit more tasty.
"No human to talk to. "
Don't you have a telephone? Are there no volunteer opportunities in your area? Around here there are lots of places looking for volunteers - food pantries, the senior center, the animal shelter... Places where you could be around some people and maybe make some friends.
I absolutely refuse to eat mexican food. That includes “tortillers”.
All that my friends Mom did was cook the beans and mash with lard in a skillet. She made homemade tortillas everyday like they make pizza. Swirled it around on her hand until it was big and flat and threw it on the burner on the stove to make brown spots.Ya my budget too. I got four kids. We got steer in the freezer, refried beans, cheese and tortilla.

Um, no.You really should reconsider tortillas.
Sorry for your loneliness Miss Mary. I still have my Dh's companionship but less and less conversation as the days go by. I also miss going out for the few things we still went out for like going to the P.O. and getting a hamburger out. Even Dr's appt was something to look forward to as I liked my wound care nurse. Now nothing. Been almost a month since I talked to anybody except online.Me too Dennis. I know exactly how you feel. But i am retired and it's worse. We always keep a case on hand of the refried beans. The wife doesn't eat them, but I do.Ya my budget too. I got four kids. We got steer in the freezer, refried beans, cheese and tortilla.

I love canned refried beans. Will eat them cold out of the can with a spoon. Same with canned peas. Comfort food.We always keep a case on hand of the refried beans. The wife doesn't eat them, but I do.
Sucks to hear they are limited in stock these days. I normally get mine when I do mystery shopping at a grocery store. Free food and a bonus to do the shopping.w

Well, you don’t live in “Nuevo mey-hee-co del norte”, where there’s not one decent Italian, seafood or german restaurant, but there ARE 15,000 mex ones. Where “breakfast burritos” are very nearly your only choice for breakfast. You try living down here rather that in your midwest whiteopia and see how you feel after a year or two.
You really should reconsider tortillas. Think of them as flat bread wraps
Now you have a bread maker so it should be opening up a world of making things with flour. Flat bread is simple and the wraps you make can be used for all sorts of things like wrapping hotdogs which someone mentioned. Its not just for mex food. I make a cheese steak sandwich using a wrap every now and again.
Then you have pizza which is basically a flat bread but you added yeast to the dough. Then pasta which is basically flour, eggs and oil.
Then once the dough has settled or risen in the case of pizza you just roll them out as thin as you desire with a rolling pin or use a press or pasta machine if you have them.
Its really simple and if the grocery stores are low on stock like they currently are then making this stuff allows a bit of normal to your life.
And the dogs will enjoy eating your rejects as you practice making them.

Grilled chicken, finely sliced cucumber and tomato, lettuce, and sweet and sour sauce wrapped in a warm tortilla, yummy!
Sam's had them last week. They limited my order to 2 cases though.Ya my budget too. I got four kids. We got steer in the freezer, refried beans, cheese and tortilla.

Another alternative to tortillas if you can't find them in the store is by buying the Pillsbury biscuits in those pop'em rolls.
When you flatten them out good and then fry them up, they taste just like my home made Indian fry bread.
Shhhhh... Lol!
It's also a great way to have fun, introducing cooking to kids. V
3 people quit at my hubby's store last week.I try to keep in mind that no matter how much i read and plan the future will be unlike anything i expected. Maybe not better or worse but different.
The article also made me think about the employees that are still plugging away. Has anyone seen reports of employees bugging out? In my area i haven't noticed a lack of employees but i would imagine when bodies start piling up and people get their government check, the retail pay may not be worth the risk.
if you got nothing else to do, you can make a big pot of beans for refried. I used to do that when kids were little. I kept some in the fridge and froze some.
Another fun things was take a pack of tortillas, any kind. Cut the stack in 4, like a pie, fry up quick in little oil. Salt. Makes good chips. Or fry them whole in butter. Grandsons love these.
Stores here aren't too bad. Still low on the regular stuff everyone is seeing. I just went one day when I had to go to feed mill.
