How long is the product good after opening? I bought a #10 can of banana chips at a prepper expo and it said use within 2 weeks after opening, just wondering if all their cans have that shelf life since there is no way I can use a #10 can that quickly.

A #10 can of banana chips is alot of chips!
I know, been there done that. Still can't stand the smell of them.
I buy from safecastle often but no more chips.

You can ziplock some chips and toss them in the freezer to extend the life.

Mom2many - I often re-package bulk quantities into small amounts (sometimes just vacumn seal; sometimes mylar/O2). With just the two of us, it's silly to think we could eat larger quantities in that amount of time. But then, I'm also prepared to store in the #10s for now; and then reseal if we need to tap into them.

I understand that is before opening, how about after opening?

I also have a vacuum sealer and mylar/02, but what about when TSHTF and there is no or limited electric or the 02 packets run out? What will we be able to do besides eat bananas 24/7?

The can food usually last for 2 months after opening. However seems you are well prepared with vaccum sealer and mylar/02. If you reseal the product it will last few years. Giving an exact figure is hard as a lot depends on storage conditions, temperature etc.
