Knew the title would get some attention.

Anyway did a little experiment recently. I knew Port and Marsala wines were fortified with Brandy and it helped keep them from going off once the bottle was uncorked.

I got a liter and a half bottle of Costco's finest and (after carefully testing a glass to see if it was good ;)) I added two tablespoons of vodka. It worked. The wine was fine even after several days and cheese and charcuterie boards.

Be warned. It has a bit more kick than regular wine.

haha, I'm not a wine drinker any more, just don't care for it. Vodka on the other hand is different. I like a bloody mary from time to time, helps calm my nerves. I don't drink one very often, maybe three times in the last 6 months. However, I have had it for breakfast.

I never thought of adding anything to our wine. An unopened bottle doesn't last long enough for it to go "off taste" here. Two days at the most.
Guess it's the penurious streak in my nature. This allows me to buy cheap table wine, drinkable but nothing special and have it when I want. It means I don't have to feel like I should finish it before it goes off. It also means I can buy bigger bottle of table wine. Now I no longer feel like I have to save it for a special occasion and I feel freer to cook with it.

Freezing leftover wine tip: There was/is(?) an English cooking show. I don't remember the host's name. She would take the left over bits of wine in the bottle, measure them into 1/4 cup or 1/2 cup servings and then freeze them in plastic bags. That way they were pre-measured for things like soups, stews, gravies and sauces. I've done this it works.

Wine jelly: I've made jelly out of wine. I just substituted the wine for fruit juice in the jelly recipe. It worked. One Christmas I made jelly from different types of wine for gifts.

Wow. I guess I'm undereducated when it comes to wine. Before I read your OP, I didn't even know that wine lost it's taste. Had no idea. We keep a stocked wine cabinet, and drink a glass every night while relaxing watching TV or DVD's. So, we don't keep a bottle open for very long. Sometimes we drink a glass with our dinner, too.

I don't think I would like the wine jelly, but the tip about freezing wine sounds like a plan.

Hmmm, this is super interesting!
Yes we ARE wine people but I had no idea about saving it for jelly or freezing it!
Goodbye too! ( but like others have said, it doesn’t last at our house either haha! )
