OT/MISC What's For Dinner?

Bacon and cheese omelet (mainly because it's colder than hades in Colorado right now), hash browns with onion and fresh out of the oven bagels. I think I finally got this bagel recipe figured out, but boy, is it a futzy PITA!

This batch came out excellent!

I've been thinking about that. Hmmm, I have some leftover spaghetti sauce. But meh. I was really thinking butter-fried fresh chicken tenders and sumpin sumpin...... don't know yet. Steak fries.

And I still have most of a pan of those insane brownies I made last night.

On TB every waking moment
Got leftover roast beef that needs to be eaten. The roast got cooked in the crock pot resting on a thick sliced sweet onion and a couple of sticks of celery. I put the cooked onion in a saucer and mashed it up with a fork, then dumped the onion in the gravy as it thickened - best gravy ever. Some brown rice and the leftover peas and baby carrots should do it.

Duncan Hines Double Fudge Decadent brownies.

1/2 Can Betty Crocker Vanilla frosting.

Make the 2-egg version of the brownies (on box). 8-inch pan. Cool and frost with the frosting.

Cut in individual servings. Top each serving with a big ball of chocolate ice cream.

Oh God..I know I'll pay. Went down the jambalaya rabbit hole today.

Spicy sausage (browned with just a little bit of sugar for extra caramelization), bell peppers, vidalia onions, too much garlic and Tabasco for any sane human being, homegrown canned chicken stock with added butter just because...and plenty of rice to soak it all up into a heavenly brew.

Not getting on that old scale tomorrow I tell ya.

Noodle bowls with green bean thread noodles, pork roast reheated in a chicken broth seasoned with fish sauce and soy sauce, and a myriad of finely cut up raw veggies: carrot, radish, radish sprouts, green onion, cilantro, bell pepper, etc. and then a dollop of gojuchang chili paste added to the bottom of the bowl.

Leftover minute steak rolled in some kind of rub thing. Both bought on sale at the commissary remainder section.

Homemade chicken quesadillas with creamy jalapeno sauce. Throw in a couple of Aldi double-stuffed cookies with a cup of tea for dessert.

that's ALWAYS GREAT!!!!!!!!!!!! we use Zatarain's family size as the "base" and add left over smoked chicken/pork/shrimp with some green pepper yellow squash and zucchini . . . add the LOOOOO-sianna hot sauce and we're off to the races. and we always do the Family size bc that way there's plenty left for tomorrow! :D

Haha! I usually do mine from scratch and make it in an old giant sized Wok pan because it holds about 3 gallons, full up. The rice can sit in there and burble in all that goodness til it's perfection. Yup...there's never enough left over.

Had a couple hot dogs in the fridge from last month. Slit them and boiled them twice. Toasted some light whole wheat sandwich bread and put half slice of American cheese on them. Added the hot dogs, mustard, and relish. Washed it down with small glass of Diet Coke. Cinnamon applesauce for dessert. Drinking some water now.

Recipe please!
How is that made?
I'm already making salmon patties & yellow rice.

Don't really have one.
Start by sauteing some finely diced carrots, celery and onions. Maybe about 2 cups worth total uncooked.
Mix that with about 2 pounds of ground chicken.
For spices we usually use salt, pepper, poultry seasoning, garlic powder.
Pack it into a loaf pan, takes about 40 min at 350 or so.

Obviously you need to separately make chicken gravy to go with the mashed potatoes that you also made.

Yup...was just laughing...two months into the PANDEMIC CRISIS, but it doesn't sound like the the TB2K cook-meisters are having any problem whipping up something fabulous for supper. :)

That's because we all saw it coming before it was a blip on anyone else's radar and were able to top off all the preps so we wouldn't have to skimp on the good life.. Just one of the many of the reasons I love this place!

Celery and hummus. I didnt eat lunch today and just don't feel like anything heavy for dinner.Wife is in the kitchen whipping up something beef based for herself. Smells good but I just want celery and hummus tonight.
