Herbal What to do with pineapple sage, sage and lemon verbena

My neighbor cut down her pineapple sage, sage and lemon verbena and gave them to me. :spns:They are drying, on my enclosed porch. Anyone have good ideas what to do with them? I made a tea from the fresh pineapple sage last night. It was all right, I'm not a tea fan, though, not enough kick.

Obviously, I will use them for seasoning when they dry, but I'm curious if there are any potent health applications for them.

Wow, my BIL just stopped by and dropped off a boat load of fresh thyme and rosemary to dry. He says there is more if I want it. I'm really raking it in! I don't believe this. Now I just need some parsley :)

Lemon Verbena can be mixed with other lemon-y herbs for tea - or to help flavor medicinal teas. Sage is an astrigent and antiseptic herb - was used for wounds in WWII to help prevent infection.

It sounds like you have more than enough to last you a while, but if you have the room in your freezer, I like to mince my extra herb(s), put 1 tablespoon per cube of an ice cube tray and add enough water to cover the herb. Once frozen, I pop them out of the tray and store in a freezer bag in the freezer. Super convenient to pop one out of the freezer and add to a recipe during the cooking process.

Note: One tablespoon of fresh herbs is equal to 1 teaspoon of dried.

Great idea! Thank you!
